My priority is always plants! Try this easy Eggplant Steak – smoky, spicy & so satisfying 🤍 Mustard oil @parasfoodspakistan Recipe: 1️⃣ Cut 1 large eggplant (brinjal) into thick round steak slices. 2️⃣ Sprinkle a little salt and keep aside for 10 minutes (removes bitterness). Pat dry. "GET The Complete Plant Based Cookbook - Over 200+ Delicious Vegan Recipes Including 30-day Meal Plans" =>> LINK IN BIO 🔗 @lovevegan_recipes CREAMY ROASTED GARLIC PASTA 🧄🍅one of my favorite easy #vegan meals that is high in protein & packed with flavor! SO YUMMY! 😍 By @Thetastyk —•—•—•—•— Yields: 4-5 14oz (400g) pasta Roasted veggies: 1-2 garlics, whole (1 large or 2 small) 3 Tbsp (45ml) olive oil 4 cups (1kg) cherry tomatoes, halved pinch of salt & pepper Creamy sauce: 1 Tbsp (15ml) olive oil 3 shallots, diced 1/4 cup (60ml) dry white wine 2 cups (480ml) plant-based cream (e.g. soy cream) 1/2 tsp salt 1/4 tsp pepper 1/4 tsp nutmeg 3 cups spinach, chopped 1. Preheat the oven to grill at 200°C/400°F and line a tray with parchment paper. 2. Take the whole garlic and slice off the head. Drizzle with a bit of olive oil and sprinkle some salt on top, then place the head back on and wrap each garlic in a small square of parchment paper and place on the tray. 3. Place the tomatoes on the same tray, add oil and salt on top and combine. Bake in the oven for 45 minutes, taking out the tomatoes after 30 minutes. 4. In the meantime heat the olive oil in a large pan on medium heat. Sauté the shallots until golden, then add the white wine and cook for 30 seconds. Add the cream and spices and let simmer for 3 minutes, then take off the heat. 5. Cook your pasta al dente according to package instructions. 6. Squish the roasted garlics out of the bulb into a blender and add 1.5 cups of the roasted cherry tomatoes (with juice), as well as the cooked cream sauce. Blend for 30 seconds until smooth, adjust spices and then pour back into the pan over medium heat. 7. Add in the spinach and let cook for another 1-2 minutes, then add in the remaining cherry tomatoes, as well as the cooked pasta and combine. Comment "😍" if you want to try this!

Who else loves delicious but healthy flexitarian meals?! It's a yes from Leanne @the_fitness_dietitian! Check out how Leanne makes her delicious Flexitarian Nacho Traybake using our Plant Based Mince. Extra points for adding beans and cheese to boost the protein, plus lots of added plants (nine plants in this recipe!)🌱 Ingredients: 1 large red capsicum (chopped) 200g mushrooms (sliced) 300g pack of Birds Eye Plant Based Mince 175g plain (salted) corn chips 1/2 of a 400g can of black beans (rinsed and drained) 1/2 of a 420g can of corn kernels (rinsed and drained) 120g grated cheddar cheese 1 large avocado (sliced) 8 tbsp salsa 1/2 medium red onion (chopped) Small handful of fresh coriander (chopped) 1 red chilli (sliced) *omit if you don’t like heat Method Pre-heat oven to 200 C. Heat a non-stick pan over medium heat and add in the chopped capsicum and mushrooms. Heat and cook vegetables until just soft. Remove from heat and add to a medium bowl. In the same pan, add the Birds Eye Plant Based Mince and heat until just warm. Remove from heat and add to a bowl. Spread out your corn chips onto a large baking tray. Evenly distribute the vegetable and mince mixture on top of the corn chips then add your drained beans and corn on top of this too. Sprinkle over the grated cheese then pop into the oven to cook until the cheese is melted (roughly 10-12 minutes). Once cooked, remove from the oven and top with avocado slices, dollops of salsa, red onion, coriander leaves and chilli slices.
