“May we eat and be reminded of how on this day the avatar was not boiled in oil”
“Instead of using a bread/cookie dough, I opted for a mochi dough so that it maintained a chewy texture while being stretchy and droopy (it didn’t need to be fried either). Since there wasn’t any filling, I flavoured the dough by using coconut milk (similar to the coconut mochi you find in Asian bakeries) so it’s also vegan friendly!
Find the recipe below ⬇️
Coconut mochi 🥥
200g sweet rice flour/mochiko
20g cornstarch
100g sugar
375g coconut milk (for the arrow, replace coconut milk with butterfly pea tea)
10g vegetable oil
1. Whisk all the ingredients together until smooth
2. Transfer into a lined/plastic wrapped tin
3. Steam on low-medium heat for 25-30min
4. Dust your work surface with cornstarch
5. *Knead the mochi dough until smooth
6. Roll out the dough and use cut out whatever shapes you need (I used a gingerbread man cookie cutter and free-handed the arrows)
*please knead with caution as the dough is extremely hot 🔥

AIBOUNCY Kuih Kaswi GEDIK recipe ↓ ↓
When I first saw this trend I know I have to make it because Kaswi is my top 5 favourite Malaysian Kuih 😌❤️
Kaswi is a steamed rice cake made with tapioca flour and rice flour flavored with sugar and pandan, topped with grated coconut. 🥳
Different from the original Kaswi/Kosui, to make this Kaswi bouncy the recipe is 1:1 ratio of tapioca flour to AP flour where the OG Kaswi, it’s usually 1:2 ratio respectively. Also the OG ones are mostly just square in shape
I love the boucy/qq/gedik ness of this kuih! ✨ If you like something chewy, you would love this! & how cute is this shape tho? 😍It made me happy just seeing how pretty it came out from the mold. You can also use muffin tins if you want!

RECIPE:
2 cups of pandan juice (5 pandan leaves + 2 cups water)
1 cup all purpose flour
1 cup tapioca flour
1/4 cup coconut milk
1 tbsp air kapur sireh (limewater)
1 cup - 3/4 cup sugar (less if you prefer less sweet)
1-2 drop green coloring
1 tsp salt
1/2 cup grated coconut
Salt to taste
Oil for oiling the mold
STEPS:
1. Blend pandan leaves and water. Make you measure it to be exactly 2 cups after blending. If it’s not enough, you can top it up with a bit of water.
2. In mixing bowl, mix all the ingredients and whisk well to combine.
3. Sieve it for a smooth batter.
4. Oil the molds on all side for easier release later. Steam empty cups in steamer for 5 mins before pouring the batter.
5. Pour the batter into the preheated cups, about 3/4 full. Steam for 15 mins. Let it cool for 5 mins before taking it out from the mold
6. Steam the grated coconut and salt mixture for 10 minutes.
7. Top kuih with grated coconut & enjoy!

-1 1/4 cup glutinous rice flour (like Mochiko)
-1/4 cup granulated sugar (adjust to taste)
-1 teaspoon baking powder
-splash of vanilla extract (optional)
-pinch of salt or 1/2 teaspoon miso (optional)
-1 large egg (use 50 g silken tofu, apple sauce, or banana for egg-free waffles)
-1 cup milk (used plant-based milk for dairy-free waffles)
-2 to 3 tablespoons black sesame powder
-1 tablespoon @rooted.fare black sesame crunchy butter
Makes 2-4 waffles
Need waffle maker or can use batter for pancakes too
