The concept itself began with time spent in New York and a specific appreciation for eating pizza by the slice. What started as a cloud kitchen pickup operation, then a run of pop-ups across the country, has evolved into a trattoria-style sit-down restaurant – the first permanent home for a brand that built its following the slow way. Home Cooking Sessions: Parmigiana Di Melanzane. A breaded version of the southern Italian classic. Full recipe below! 👇🏽🇮🇹 - 1. Thinly slice your aubergine, then sprinkle over some sea salt and let sit for ~45 mins - this will draw out some of its excess water 2. Rinse off the salt, then pat dry and start breading 3. You can either just dust in flour, or do a 3-stage process like this. I tried this way for the first time and actually prefer just flour! 4. For this recipe though, dust in flour, then beaten eggs, then panko and set aside 5. Add a generous glug of EV olive oil to a pan and bring to med-high, then place in 2-3 of your aubergine cutlets at a time and fry till golden - basting and flipping throughout 6. Once crispy, set aside, season and repeat 7. For the sauce, add 1 finely diced shallot, 2 cloves sliced garlic, peperoncino and parsley stems to a pan laced with olive oil and fry on med heat for ~3 mins 8. Add in ~750 of tomato passata and season with sea salt, black pepp + 1tsp sugar, followed by chopped basil - cook on low for ~20 mins then set aside 9. Assembly: add some sauce to a baking dish, followed by your aubergine, more sauce, fresh basil, powdered parmigiano Reggiano + fresh & dried mozzarella 10. Repeat the process until the top layer which is just tomato sauce, plenty of cheese and some ev olive oil 11. Bake at 180c for 30-45 mins until golden and bubbling, then rest for the same time before serving - A classic Italian dish that’s comforting and indulgent. There are a few methods to preparing the aubergine and although this one’s good, I still prefer the simpler method of dusting with flour as opposed to the panko aswell.
