Fermentation accelerates quickly, peaks fast, and collapses just as fast. Perfect only if you’re ready to mix dough within a few hours. Right: 1:2:2 More fresh flour. More buffering against acid. Fermentation slows, gas production is steadier, and the gluten web has time to hold pressure. The result is a wider, calmer peak window — not just more bubbles. When beginners struggle, it’s rarely the flour, the water, or the starter itself. It’s feeding on autopilot — using the same ratio no matter the schedule, temperature, or goal. Your starter isn’t inconsistent. Your ratio sets the rhythm. Feed for when you want to bake — not just because the jar looks bubbly. ❌ Don’t feed your starter at an equal ratio (1:1:1). ❌ Why? When you refresh your starter with a higher ratio, like 1:3:3, you’re adding more fresh flour. This helps dilute acidity and gives the yeasts a real boost. 💥 Result:
✔️ a less acidic starter
✔️ more stable and predictable fermentation
✔️ better leavening power
✔️ a maturity peak that lasts longer (so you have more flexibility for baking) With an equal ratio, the starter rises quickly… but it acidifies just as fast. 
On the other hand, 1:3:3 produces a more balanced, more tolerant, and more consistent starter over time. 👉 Personally, I find 1:3:3 to be the ideal ratio for maintaining a healthy starter and achieving more balanced bread, both in flavor and fermentation. ✨ How to feed it? For a 1:3:3 ratio, feed one part starter with three parts water and three parts flour.
For a bread recipe that calls for 120 g of active starter, you would feed it like this:

When I first started making sourdough, i thought feeding a 1:1:1 ratio was ideal... But now I know better. Before I break down the ratio, comment RISE if you want my top starter tips sent to your dms!🫙 The ratio is starter:water: flour The starter is always 1. To get the other numbers, you just multiply how much starter you have by the starter. Eg: 10g starter:50gwater:50g flour would be a 1:5:5 ratio. If we had 20g starter, we would add 100g water and flour for the same ratio. The reason we discard before feeding is because the starter needs to be fed at least its weight in flour and water. ⚖️ (so a 1:1:1 ratio is the bare minimum) Every time we feed, it gets bigger. If we never discarded, we'd end up with an unmanageable amount of starter that would take over our whole kitchen.😵‍💫 Starters prefer higher ratio feeds. Ie. 1:5:5 or even 1:10:10. Keep your starter small. less than 10 gms stored in fridge - Why? - easier to maintain, stir, feed. no waste- no discarding, easier to perk up. 2. Make it fit your schedule. Get a routine. - I bake on Saturdays. After I use my starter - I put the scraps (~10 gm) into a tiny jar and plop it in the fridge. On fridays, I’ll pull it out in the AM & feed it maybe 25 gm warm water (~98°F) + 25 gm flour. Warm area. Then that night I feed it double its weight. So 110 gm each water/flour. That way it’s ready to use Saturday morning to make 2 loaves ( if I was planning to do bigger or smaller batches of things, I’d adjust the feeds ) 3. If I skip a week and don’t want to bake - the starter gets a snack. - Take it out, feed it a small amount so it doesn’t starve. lol. Maybe 2-5gms of water / flour. 4. If the starter smells sour - your bread is gonna be sour too - If it smells potent, it’s acidic. Starving. It needs to be fed more before you bake- unless you want your sourdough to taste more sour. I don’t lol. That’s just me. My peaked starter needs to smell like bread or else not baking. This happens when you forget to feed or don’t feed enough. 5. If your starter isn’t rising over double its height - feed it with wheat or bead flour - Why? - they have higher protein. Protein is fuel. 6. You don’t need to discard if you feel a tiny starter. - I hate discard, I hate waste. If you starter, for some reason needed extra feeds and I had “too much” then I’m making banana bread and throwing 100gms of starter in with it. Done. Discard is just not my thing, it feels like one more thing on my plate. 7. Mix your starter like you’d mix your dough. Beat it up - Mixing is the foundation of strength. For a loaf, same applies, the better you mix, the less folds you’ll end up going. Mix starter til it’s smooth, no clumps, then smack it around a few more times for good measure.
