Comforting, rich and so flavorful❤️ Ingredients (4-6 persons) For the Oxtail • 4.5-5 lbs / 2-2.2 kg oxtail • 2 onions, sliced • 1 red pepper, 1 green pepper, 1 big tomato, chopped • 6 garlic cloves, minced • 5 spring onions, chopped • 1 tbsp fresh thyme • 1–2 scotch bonnets (whole) • 3 tbsp soy sauce + Worcestershire • 2 tbsp browning sauce • 2 tbsp ketchup • 1½ tbsp brown sugar • 1½ tsp whole allspice • 1½ tsp grounded allspice • 2 tsp smoked paprika • 2 tsp oxtail seasoning, opt. • 1 tsp black pepper • 2 tsp fresh ginger, grated • 1 tsp ground ginger • Salt, to taste For cooking • 2-3 tbsp oil • 2 tsp brown sugar • 3½-4 cups / 900 ml - 1 L beef stock • 2 bay leaves • 4-6 thyme sprigs • 1-2 cans butter beans For Rice & Peas • 2 cups / 400 g rice • ¾ cup / 150 g dried kidney beans (soaked + cooked) • 1 can (14 oz) / 400 ml coconut milk • 1¾–2 cups / 400–500 ml bean liquid or water • 2 spring onions • 2 garlic cloves • 2-3 thyme sprig • 1 whole scotch bonnet • ½ tsp allspice • Salt • 2 tbsp butter, optional Instructions 1. Marinate the oxtail: Wash then pat dry oxtails very well. Cut off 40% of fat. Then Mix oxtail with all marinade ingredients. Cover and refrigerate overnight. 2. Brown the oxtail: Remove meat (save marinade) and pat dry. Heat oil, brown oxtail in batches until deeply golden. Set aside. 3. Build the base: Add brown sugar and let it caramelize. Add reserved marinade to the pot and cook 5-7 minutes. Return oxtail, add stock, thyme, bay leaves and whole scotch bonnet. 4. Braise: Cover and simmer on low heat for 3½-4 hours until tender. Keep the heat low and slow - too high and the fat renders too fast, making it oily and less tender. 5. Finish: Add butter beans and simmer uncovered 30–45 minutes until thick and glossy. 6. Make rice & peas: Boil beans until tender, save liquid. Add coconut milk + bean liquid with garlic, thyme, spring onion, allspice + scotch bonnet. Add rice + beans, season with salt. Simmer covered ~15 minutes. Add butter (optional) and rest 10 minutes before fluff. Serve with pineapple salad and enjoyyyy🫶🫶 #jamaicanfood

Tender, juicy slices of roast beef paired with crispy roasted potatoes and bursting sweet cherry tomatoes. It is a hearty, wholesome meal packed with iron and high-quality protein. 📝 Ingredients: ✦ 2 lbs (approx. 1kg) Beef Top Sirloin Roast or Rump Roast ✦ 1.5 lbs Baby Potatoes, halved ✦ 2 cups Cherry Tomatoes ✦ 3 tbsp Olive Oil ✦ 4 cloves Garlic, minced ✦ 1 tbsp Fresh Rosemary, chopped ✦ 1 tbsp Fresh Thyme leaves ✦ 1 tsp Dried Oregano ✦ Salt and Pepper to taste 👩‍🍳 Instructions: 1- Preheat your oven to 400 F (200 C). Take the beef out of the fridge 30 minutes prior to cooking to reach room temperature. 2- In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, oregano, salt, and pepper to create a herb paste. 3- Pat the beef dry with paper towels. Rub half of the herb paste all over the beef roast. 4- Place the beef in the center of a large roasting pan or baking sheet. Arrange the halved potatoes around the beef. Toss the potatoes with the remaining herb paste. 5- Roast for 15 minutes at 400 F to sear the outside. Then, reduce the oven temperature to 350 F (175 C). 6- Continue roasting for about 35-45 minutes. (Use a meat thermometer: 135 F for medium-rare, 145 F for medium). 7- About 15 minutes before the beef is done, scatter the cherry tomatoes onto the pan around the meat and potatoes. 8- Remove the beef from the oven and transfer to a cutting board. Tent loosely with foil and let it rest for 10-15 minutes. The perfect Sunday comfort food meal prep as you can make one big chilli, have some for dinner and the rest for meal prep. HIGH PROTEIN CHILLI (8 MEALS) 🌶️💪 Ingredients • 1kg 5% beef mince • 1 onion • 2 red peppers • 2 tins chopped tomatoes (400g each) • 400g kidney beans (drained) • 2 tbsp tomato purée • 2 handfuls mozzarella Spices • 2 tsp chilli powder • 2 tsp smoked paprika • 1 tsp cumin • 1 tsp oregano • 1 tsp garlic powder • Salt & pepper Method: •Add chopped onion + peppers to a pan and cook 5–7 mins. •Add the beef mince and cook until browned. •Stir in tomato purée and all spices. Cook 1–2 mins. • Add chopped tomatoes, kidney beans and 200ml water. •Simmer 25–30 mins until thick. •Divide into 8 portions. I split 6 onto cooked jacket potatoes and topped with mozzarella, then baked for 15 minutes. We then have the remaining two portions with rice. #EasyRecipes #mealprepideas #mealprep #highprotein #comfortfood

Save this for the week ⭐ Full Recipe below ⬇️ Follow for more easy flavors & lifestyle! 🥘✨ #sundaydinner #comfortfood #groundbeefrecipes #easyrecipes #dinnerideas Ingredients • 1 lb 85/15 ground beef • 1 tbsp avocado or olive oil • ½ tsp kosher salt (start light) • 1 tsp black pepper • 2½ tsp Slap Ya Mama • 1 tsp roasted garlic powder • 1 tsp onion powder • ½ tsp smoked paprika • ½ tsp chili powder (optional) • ½ tsp Badia Complete • 1 tbsp minced garlic • 1 tbsp butter • 1 cup beef broth (or pasta water) • 1½ cups heavy cream • 2 cups shredded sharp cheddar • 1 lb cooked pasta (elbow or shell) • ½ tsp Worcestershire (optional) Instructions 1. Brown beef Heat oil over medium-high. Add beef and break it up. Add all seasonings. Cook fully (5–6 min). 2. Drain fat Remove from heat and drain excess grease completely. Return to pan. 3. Build flavor Add minced garlic. Cook 30 seconds. Add butter and melt. Stir in Worcestershire if using. 4. Add liquids Pour in broth and heavy cream. Let gently simmer 2–3 minutes until slightly thick but still loose. 5. Add pasta Stir in cooked pasta and combine well. 6. Add cheese Add cheddar in small handfuls, stirring until smooth and creamy. 7. Final taste check Adjust salt if needed. Serve hot.
