30Trust me on this and stay tuned for #30MFSourdoughSchool - round 2!
My classic sourdough recipe (see my “Phase 2” story highlight for a full tutorial):
Ingredients
100g active starter
375g filtered 75° water, divided
50g whole wheat flour
200g bread flour
250g all-purpose flour
10g kosher salt
Directions
Combine starter and 350g water in a large glass bowl and stir to dissolve. Mix in flour. Cover and let sit for 40 minutes.
Add salt and remaining 25g water and knead in, pinching and squeezing the dough until the salt is dissolved and water is absorbed. Cover and let sit for 30 minutes.
Stretch the dough gently and fold over itself, rotate 90° and repeat until you’ve done all sides (4 total). Cover and let sit for 30 minutes. Repeat this process every 30 minutes for 2 hours (for a total of 5 stretch and fold sessions).
Turn dough out onto a lightly floured surface and pre shape, cover with a tea towel and let rest for 20 minutes. Shape into a oval or ball and let it proof in a lined banneton basket overnight in the fridge.
Preheat bread pan or Dutch oven at 475° for 1 hour. Remove dough from the fridge and score immediately. Bake at 475° covered for 20 minutes, then uncovered for an additional 12-15 minutes until golden brown. Let cool on a wire rack for at least an hour before slicing.

_LMy easiest go-to score, a simple large laurel leaf. I always think these bake up so pretty and for not much effort!
You’ll see I’m demonstrating the @sourly 5-minute score, where you put the loaf in the oven before cutting the main expansion score. After 5-minutes you remove it from the oven and score - the blade just glides through the partially baked dough and gives you a really clean line. It works particularly well for a zigzag score or on dough that’s a bit overproofed or slack from too much hydration/or being at room temp for a while whilst you’re scoring the fine details.
As always, I’m using my @wiremonkeyshop lame - definitely my most beloved baking tool 😍

SWLet’s score some turkey 🦃
I know it’s supposed to be “let’s score a turkey,” but “let’s score some turkey” just sounds better to me 😂
This is just a little loaf ,I didn’t plan this one at all, I was just inspired with the talented Miss Sarah @forestandfernbakery and just went with it 💗✨🥰.Totally took forever placing those oats one by one (but honestly, that ended up being my favorite part). Does it look like a turkey to you? 😅
I couldn’t bring myself to cut it, so I’m just gonna give it to someone instead 🧡
