ANTransform your Christmas menu with the quintessential delight of perfectly crafted appams! I’m sharing a foolproof recipe(with a twist 😉)appams with thin, crispy edges embracing soft, fluffy centres!
Basmati rice- 2 cups
Coconut- 1cup
Flattened white rice- 1cup
Coconut water- 1/2cup
Thick yogurt- 1/2cup (not sour)
Water- 1.5 to 2cups for grinding
Sugar- 1/4cup
Salt- 1/2tsp
Instant yeast- 1/2tsp
- Wash rice 3 to 4 times and soak in 8 cups of water for two to three hours.
- Drain rice and grind for 30sec. Add coconut, flattened rice, yogurt and 1/4cup coconut water and grind for 30sec. Scrape the sides and grind again for 30sec.
- Add rest of the coconut water and grind
- Add 1/4cup of water at a time and grind until the batter is smooth.
- Transfer to a big bowl. Add sugar, salt and yeast.
- Stir well and let it rest at room temperature for 4 hrs ( maximum 6hrs) Batter will develop air pockets.
- Heat an appam kadai on high flame on your medium burner . Pour a ladle full of batter once the kadai is hot.
- Swirl the batter once to spread . Cover and lower the flame.
- Cook for 2 to 3 minutes until center is cooked
- Open and increase the flame to high. Cook for 30sec.
- Serve warm
