If the dough is NOT coming out clean from the bowl, what does it mean? It means the dough is still weak or unbalanced. This can happen for several reasons — not just hydration 1- Reason: Gluten is NOT developed yet Why it happens: Too few stretch & folds Folds done too gently or too quickly Dough didn’t get enough resting time How to tackle: Add 1–2 more sets of stretch & folds Keep 30–45 min gap between folds Stretch till resistance, don’t tear Reason 2- Hydration is too high for that flour Why it happens How to tackle: • Reduce water by 2–5% • OR switch to stronger flour • start at 65–68% hydration “Not every flour can hold high hydration.” 3- Reason: Dough is over-fermented Why it happens: • Too warm environment • Long bulk fermentation • Starter too strong or used in excess Signs: • Dough feels loose & sloppy • Tears while folding • Sticks even after folds How to tackle: • Reduce bulk time • Use cooler water • Reduce starter percentage slightly “Over-fermented dough loses strength and becomes sticky again.” 4- Reason: Starter is weak or unbalanced Why it happens: • Starter used before peak • Too acidic starter • Inconsistent feeding Signs: Dough feels sticky but doesn’t stretch well No strength even after folds How to tackle: Use starter at peak or just before peak Feed regularly for 2–3 days before baking Maintain correct feeding ratio “Strong starter = organised dough.” Sourdough dough strength, stretch and fold technique, gluten development, sourdough fermentation, dough hydration, clean bowl test, sourdough troubleshooting, bulk fermentation tips, sourdough baking class, artisan bread making #SourdoughBasics #StretchAndFold #GlutenDevelopment #SourdoughTips #ArtisanBread

In the past couple of months Shio pan / salt bread has completely taken over the internet and honestly, rightfully so. Trendy recipes are rarely ever worth the hype but this one deserves all the love it’s getting. If you’ve never had it, imagine the softest, most cloud like bread with a thin, crispy almost fried bottom that shatters as soon as you bite into it. The hollow centre with a pool of warm melted butter and finished off with some flaky salt. Perfection. So happy with this result after countless trials. Looks pretty easy to make but is actually deceivingly hard to make. Let’s make a Rosemary & Olive Oil Sourdough Loaf! 🍞 Bread series - part 4  This artisan bread combines the rustic charm of sourdough with the fragrance of the rosemary and the richness of olive oil. The addition of aromatic rosemary not only adds a fragrant twist but also complements the tanginess of the sourdough.  It’s great served with soups, salads, and charcuterie boards. In this video I have toasted the bread, brushed it with raw garlic and served with a sundried tomato paste for an incredible umami flavour.  Everyone loves a good sourdough bread but the word “sourdough” can make people very nervous. Here are a few tips to remember for this recipe: Make sure your sourdough starter is vibrant and bubbly, ready to be used in the recipe If you are in a cold environment we suggest keeping the dough in a warm and wet environment for the best result. You can do this by leaving the dough inside your oven or microwave at 25-27°C with a cup full of hot boiling water inside to help to create humidity For a slow rise, place the dough in the fridge overnight or for around 12 hours - this will improve the flavour and aroma of your bread. If leaving to rise overnight in the fridge, bake the loaf straight from the fridge.  And remember, don't be scared to have some colour on your bread, this is where a lot of the flavour and texture of the crust comes in!  Throughout this recipe, we will guide you through each step with detailed instructions, ensuring that your Rosemary Sourdough bread turns out beautifully. From mixing the ingredients and kneading the dough, to patiently waiting for the fermentation process to work its magic, the rewards will be well worth the effort. 🤗 Full written recipe on the website. BEGINNER Step by step recipe for making Artisan bread! Recipe: 3 cups flour - sifted if you have to prevent chunks but not necessary* 1-1.5 Teaspoons of salt *depends on the salt! 1 packet of fast acting yeast I got from target Warm 1.5 cups of water (I microwave for 1 min!) Mix/ stir until it’s all mixed and essentially a ball Cover for 2-3 hours Roll into a ball with a little bit of flour. Use a spatula so you don’t even have to touch it! Beginner ** lol Preheat the oven to 425° with the pan inside! Add dough to the pan once the oven is ready Bake with lid for 30 mins Uncover/ take lid off and bake for another 12 mins That’s it!! Let it sit for an hour and then it’s ready to eat! I made garlic bread with it- SO BOMB!!

Trust me on this 😆 You don’t need St. Patrick’s Day to make this bread. Just a good sourdough… with a few twists .. a swirl of blanched spinach… roasted garlic and parmesan baked right in. It’s savory, soft, a little indulgent — and crazy better than I ever expected. The secret? Replacing the water with beer is probably the best secret yet. It definitely takes sourdough beyond basic by adding flavor, depth, and character. The malt sugars and subtle bitterness create a richer crust, softer crumb, and more complex taste, while also giving the yeast a little boost. The kind of bread you make once… and then keep making all year long. 🍞✨ RECIPE FOR INCLUSION~ Basic sourdough base or artisan bread Just replace the water in the recipe with beer. This loaf of bread went from an amateur mess to the best bread I’ve ever baked 😅 I definitely messed up when I placed the dough in the banana whatever you call that bread basket thingy. 😂 But it’s okay because that bread turned out SO good! The best ever actually. I got the easy recipe online. 3 cups of flour, 2 tsp of yeast, 2 tsp of salt, 1 1/2 cups of warm water mix it all together let it sit for 2-4 hrs in a warm place covered and then take out and fold 6 times then shape into a ball (that’s when I scored it) pre heat oven to 450 and place your Dutch oven with lid on in the oven to preheat. (Your Dutch oven is what you bake the bread in its round with a lid & specially for artisan bread as opposed to a sandwich loaf of bread) then bake at 450 for 30 min with lid on, then 12 min with lid off. So easy peasy! Credit to Tincan.
