DOFew people know this, but I actually had a basketball scholarship to play for Bacone College, but I would have had to transfer from University of Houston and relinquish my academic scholarships. Knowing that I had a small chance to make it to the NBA if I played for a small school I decided to Stay in Houston and focus on my studies. Every day, I wonder what my life could’ve been if I chose to play ball..

HUStory Time with @meetyourwagyu 📖💙
During a barbecue in 2021, we met the owners of Kirishima Ranch. Since then we’ve built a friendship, thanks to Wagyu!
The farm was originally created to supply the group’s own restaurants, hotels, and golf courses, which means production is naturally limited.
When they understood our passion for Wagyu and our respect for the work behind it, they welcomed us to work with Kirishima Wagyu as well.
Manabe San oversees the entire cycle of production, from breeding to feeding, while using technology to ensure each step meets his standards.
Sustainability is at the core of their philosophy. No antibiotics or hormones are used. Feed is carefully selected, with a focus on clean and natural inputs. Even the water comes from beneath the farm, from a well known for its purity.
For our bacon, we use the Brisket, cure it with our seasoning, and smoke it until it reaches a very tender texture 👓✈️

MAI might not be getting the name exactly right, but this was a “Bacone” – a cone-shaped creation made with bacon wrapped around fries, mince, and sauces. While the concept is unique, I found the fries to be a bit too salty, probably due to the seasoning combined with the natural saltiness of the bacon. The presentation of the Bacone is visually appealing and draws attention, making it a great street food item.The combination of flavors has potential, but a bit of tweaking with the seasoning could enhance the overall taste. Unfortunately, the sauces didn’t balance out the saltiness either.That said, I believe this is an exciting new addition to South Africa’s street food scene, and it has great potential to become popular in the long run.
