First of all, I’m sharing this with good intentions. Not to compare or make anyone feel bad, but to inspire and show what has worked very well for us 🌟 My son is 7 years old. He is extremely bright, very healthy, and an incredibly happy child. He could read when he was only two years old, and he is most likely the youngest in the world who has built some of the largest LEGO sets in the world, including the Titanic and the Eiffel Tower. He is also remarkably healthy. He’s almost never sick and has only had a fever twice in his whole life. I have been very mindful about nutrition with both my children. My oldest son @williamaugustinofficial is now 24, and I see the same pattern with him; strong health, good energy, and overall wellbeing. Over many years I have also coached families, and I have seen similar positive results with the children of my clients. I share this because I genuinely want to contribute with knowledge that can help children thrive. We started cod liver oil when he was a baby, and I also took it during pregnancy. Research suggests that nutrients like omega-3 and vitamin D support brain development, and some studies show that children’s IQ scores even increase when mothers get enough of these nutrients during pregnancy. Our meals are quite simple and nutrient dense. Breakfast is usually eggs, sometimes steak, and berries. Lunch is often pancakes made with almond flour, eggs, and cottage cheese with berries. In the afternoon he might have homemade sourdough bread with butter and honey or bee pollen, often with some organic chicken. We also tend to eat dinner fairly late, a bit like families in southern Europe. After school there is no rush. He has a small snack, we relax, and later in the evening we have dinner, often with friends or at a restaurant. Dinners are usually built around fish or high quality meat, and the evening becomes a calm and social time together. I truly believe food, lifestyle, and ofc environment play a big role in how children feel, develop, and thrive. My hope in sharing this is simply to offer inspiration and ideas that might help other families create healthier, happier lives for their children 🤍

Nothing lasts forever, but among foods, honey is one of the most enduring ingredients we’ve ever produced 🍯 You may have heard of stories where archaeologists unearthed crocks of honey from centuries ago that were still sweet. It’s widely known that honey is an effective antimicrobial agent in homeopathic medicine. Honey’s high viscosity and sugar content serve as an effective agent of preservation, with most of its free water being off-limits to microorganisms. What benefits the preserver often thwarts the fermenter in most cases, and honey’s exceptional ability to prevent microbial growth makes it nearly impossible to ferment as is. Mead, perhaps the most mainstream of fermented honey products, begins by adding water to the honey to establish a more microbe-friendly medium. Emulating that method has yielded many successful ferments over the years. More significant, however, is the expansion beyond the basic recipe that occurs once you understand the process. Why only make fermented honey with water, when you can use a liquid with flavor as well? Tea, fruit juice, and vegetable juice have all been substituted to varying degrees of deliciousness. Conversely, why use sugar to feed a ferment when you can dilute honey and use that as the sweetener instead? On a previously menu, we featured fermented honey in two forms: kombucha and lacto-fermented honey. The kombucha was brewed with jasmine tea and then seasoned with bee pollen, saffron, and seabuckthorn, while the lacto-ferment was flavored with bee pollen and pitched with a specific lactobacillus culture.

This is a very chic and super easy dessert to make for your next dinner party. It feels a little unexpected, and I think your guests will love it - light and fresh, but still generous and sweet. 🍓 1 pint fresh strawberries (about 10-12), quartered 1 spoonful sugar Zest of 1 lemon Juice of ½ lemon 1–2 cups fresh basil leaves (about 2–3 bunches) Extra-virgin olive oil (enough to fully cover the basil, about 1–1 ½ cups) 1 cup heavy cream 2–3 heaping tablespoons mascarpone 1 vanilla bean Bee pollen Flaky sea salt Place the quartered strawberries in a bowl. Add a spoonful of sugar, the zest of a lemon, and a squeeze of lemon juice. Toss gently to coat, then cover with a cloth and let sit at room temperature while preparing the rest. In a mixer, blend the basil leaves with enough olive oil to fully cover them. Strain the basil oil slowly through a cloth set over ice - the cold helps preserve its bright green color. This step takes a little time, so it can be made ahead. In a chilled bowl, combine heavy cream and mascarpone. Slice the vanilla bean open with a knife and scrape out the seeds. Add the seeds to the cream mixture and whip until thick and fluffy. Reserve in the refrigerator. To serve, scoop the whipped mascarpone cream into a chilled cup, spoon over the macerated strawberries, drizzle with basil oil, and finish with bee pollen and flaky sea salt.
