Home Cooking Sessions: Nobu’s Miso Black Cod. A sweet, earthy and addictive marinade. Probably not exact, but pretty damn close. Full recipe below 👇🏽😎 - 1. Get yourself some black cod (Sable fish). Not an ad, but I buy from @fineandwild and @thefishsocietyeu 2. Give the fillets a rinse in some dry sake, then drain and set aside 3. Marinade: 6-8tbsp white miso (i like the own brand from @japancentre ), 3tbsp dry sake, 3tbsp mirin, 5tbsp white sugar, pinch of sea salt and pepp - mix together then throw into a saucepan on medium heat and stir till emulsified - adjust the amounts to taste! 4. Allow marinade to cool, then pour over and coat the black cod fillets, then cover and marinate in the fridge for 48-72h 5. After 2-3 days, remove from fridge and drain off excess marinade, place on a baking tray and set oven to grill at 200c 6. Place the fillets under the grill in the middle shelf for 8-10 mins, then take them out, brush over some more marinade and place back in until golden brown 7. Remove and darken any lighter spots with a blow torch 8. Serve with steamed sushi rice and scored king oyster mushrooms with the marinade spooned over - This one is quite simple but looks impressive. The key is to adjust the marinade to your palette by adding more or less sugar, sake, salt etc. Marinating for 2-3 days is totally worth it. The fish flakes away beautifully. How to Make Nobu’s Miso Black Cod 🔥🐟🔥🐟 - MY FAVOURITE REELS OF 2025 ⏮️ FULL RECIPE BELOW ⬇️ INGREDIENTS: (feeds 2 ppl) - 2 x 150g portions black cod - 3 tbsp miso paste - 3 tbsp sake - 3 tbsp mirin - 2 tbsp white sugar - 2 tsp rice wine vinegar - 1.5 cups sushi rice - 6 pcs oyster mushrooms - 6 pcs baby bok choy - 1 small shallot - 1 clove garlic - 1 small piece of ginger - 2 tbsp neutral cooking oil - 1 tbsp butter - radish & green onion (optional) BLACK COD: 1) Mix miso, sake, mirin, sugar and rice wine vinegar in a small sauce pot, and heat over low heat until miso and sugar have fully dissolved. Cool down fully. 2) Remove skin from black cod if still on, but no need to remove pin bones (they can be easily removed after cooking) 3) Place black cod in a non-reactive container, and cover with marinade. Cover with plastic wrap, and refrigerate for at least 24 hours, up to 48 hours. 4) Cook fish on a small sheet tray under your broiler. Keep a close eye on your fish to ensure it doesn’t burn. When glaze begins to dry out, brush more onto the fish with any extra residual marinade. NOTE: I have an old electric oven, and I set mine to 525F degree broil, and the fish took 10 minutes to cook. However, ovens vary drastically, so proceed accordingly based on your oven. 5) When the outside of your fish has caramelized, and the glaze has dried up. Your fish should be done. However, you can also check for an internal temperature of 130F/55C. 6) If you have a torch, continue to char the outside of your fish until it is slightly blackened. I’d recommend trying Sablefish aka Black Cod from @costco if you’re looking to switch up the type of fish you’re cooking at home. This fish is buttery, flaky and high in Omega 3 fatty acids. I’ve been putting this fish into the air fryer for about 12 minutes and it comes out perfect. I know I’m probably late to the game 😂. Honey Miso-glazed @DutchYellowtail. An absolutely delicious way to serve this fish. The miso and honey give the most amazing flavour and sticky glaze. It’s super easy, too. Recipe below Serves 2 2 x fillets Marinade: 2 tbsp white miso 2 tbsp honey 2 tbsp mirin 1 tsp sesame oil Garnish: 2 spring onions Method: Mix all marinade ingredients together in a small bowl. Coat the fish with the marinade, cover, and leave in the fridge overnight. Preheat grill to high heat. Heat 1 tbsp oil in an oven-proof frying pan over medium heat. Fry the fish skin-side down for 1/2 minutes until the skin begins to crisp. Transfer fish to the grill. Cook for 3-5 minutes, until golden and caramelised. Transfer to a serving dish. Top with the spring onions. For the garnish, cut the spring onion in half lengthways, and then into 5 cm pieces. Then, finely slice lengthways into strips.
