MY TOP 3 REELS OF THE YEAR - #1: How to Make Paul Bocuse’s Fish w/ Potato Scales 🇫🇷🐟🥔 And the top spot goes to… Paul Bocuse’s Red MULLET with potato scales! 😅 I learned pretty quickly after posting this video that it was in fact red mullet that Bocuse used, not red snapper, and that likely I was sold tilapia by my fish butcher 😒, so suffice to say mistakes were made in the making of this video. BUT - it’s still by far my favourite video of the year! It’s easy to make nice food out of expensive ingredients, but this dish is the perfect example of using great technique to turn humble ingredients into something truly delicious. By far my favourite reel & recipe of 2025! 🏆 FULL RECIPE BELOW ⬇️ (feeds 2 people) INGREDIENTS 🗒️ 2 filets of *red mullet* (150g each). Skin and bones removed 1 large russet potato (with a ring cutter) OR 8-10 small Ratte potatoes 1/4 cup clarified butter 1.5 tsp potato starch 2 large navel oranges 250mL white wine 2 small shallots 2 sprigs rosemary 1 tsp whole black peppercorns 3 tbsp cold butter, cubed 2 tbsp crème fraîche 2L veal stock (no salt added) INSTRUCTIONS 📝 1) If using a ring cutter, slice your russet potato on a mandolin, approx. 1mm thick, then punch out your potatoes into small rounds 1.5cm wide. If using Ratte potatoes, peel and then slice them on a mandolin. They will end up the same size either way. 2) Blanch your potatoes in boiling water until fully cooked (but just to that point - don’t overcook them), then immediately shock them in cold water. 3) Mix 1.5 tsp potato starch with 2 tbsp melted clarified butter, creating a slurry. Mix your potatoes into this slurry. Pat the skin side of your fish filets dry, then create a scale-like pattern with your potatoes, making sure seach layer overlaps. When finished, take a piece of parchment paper, and press the scales firmly down into the fish, to ensure your scales are as flush as possible. Put your fish in the freezer for 10 minutes to set, or the fridge for 30 minutes. RECIPE CONTINUES IN THE COMMENTS ⬇️ #fish #bocuse #michelin #recipe

Paul Bocuse, Collonges-au-Mont-d’Or, France! 🐔🇫🇷 Probablemente el restaurante que más me emocionaba en este viaje, creo que no hay mucho nuevo que decir del que es probablemente la leyenda más grande en el mundo del Fine Dining, mantuvieron 3 estrellas michelin por 55 años, y dos años después de que murió Paul hace unos años, les quitaron la tercera estrella, es una experiencia impresionante, sabores muy fáciles y ricos, mucha mantequilla, no apta para estómagos débiles pero definivitamente una experiencia que volvería a vivir sin duda, un espectáculo en todos los sentidos, lo único malo, para llegar aquí tendrías que pasar por Lyon (es broma), pero lo vale. #finedining #michelin #paulbocuse #restaurante #foodreviews

Today, on what would have been his 100th birthday, I remember my dear friend through Rougets en Écailles de Pomme de Terre: red mullet with crisp potato scales. Bocuse once called it one of his proudest dishes. Like him, it is confident without excess, exacting yet generous and grounded in a deep respect for the traditions it helped carry forward.
