😍 Authentic Russian Borscht — just like Grandma used to make! That rich, flavorful borscht with crispy cabbage and golden sautéed veggies — just like childhood, when Grandma would put the pot on the table and the whole family gathered around. 🛒 Ingredients: • Beets — 2
• Potatoes — 3–4
• Carrot — 1
• Onion — 1
• Cabbage — 200–300 g
• Tomato paste — 2 tbsp
• Garlic — 2–3 cloves
• Bay leaves — 2
• Salt & pepper — to taste
• Vegetable oil — for frying
• Water — 2–2.5 L
• Meat (beef or pork) — 300–400 g 👩‍🍳 How to make it: 1. Start by making the meat broth: put the meat in cold water, add 2 whole onions, 1 carrot, and bay leaves. Simmer for 1–1.5 hours, skimming off any foam. 2. While the broth cooks, chop the potatoes into cubes, slice the beets into thin strips, and finely chop the carrot and onion. 3. Sauté the onion and carrot until golden, add the beets and tomato paste, and cook for 10–15 minutes. 4. Add the potatoes to the ready broth, cook for 10 minutes, then add the sautéed vegetables and shredded cabbage. 5. Cook another 15 minutes until the cabbage is tender. Finish with garlic, salt, and pepper to taste. Let the borscht sit covered for a few minutes before serving. Bring the smell of homemade borscht back to your kitchen — just like the good old days.

Borscht Beef shanks bones - 8 lbs Beef shank - 2 Beets - 3 Tomato paste - 2 tbsp Vinegar - 2 tbsp Cabbage - 1 diced Potato - 2 cubed Carrots - 2 shredded Onion - 1 diced Salo - 3 oz Garlic - 3 Dill - handful Sour cream Pampushky Fresh yeast - 15g Sugar - 1 tsp Warm water - 225 ml Bread flour - 400g Salt - 8 g Sunflower oil - 4 tbsp Garlic - 3 minced Parsley - 1/2 bunch minced Dill - handful minced Salt and pepper Duck egg for glaze Smoked pork belly Borscht Roast bones in oven 400f. Season shanks with salt and pepper and sear off. Combine bones with shanks in pot and cover with cold water, bring to simmer and cook 3-4 hours. Strain and set aside Saute beets with salt and pepper and tomato paste, deglaze with vinegar and set aside. Saute carrots with onion, season with salt and pepper and set aside once soft. Grind salo with garlic, salt, dill until smooth paste, set aside. With the stock you made, add to pot with chopped shank meat. Add potatoes and cabbage, along with carrots and beets, add a big spoonful of salo mix. Season with salt and pepper. Plate, add spoonful of sour cream and dill for garnish. Pampushky Dissolve yeast and sugar in water. Add 200g of the flour and mix. Cover with plastic wrap and refrigerate overnight. Next morning, add rest of flour and salt and mix until smooth. Divide dough into 8 pieces and make round. Add to baking dish, cover with towel and proof one hour until doubled in size. Preheat oven to 425F. Make basting oil and set aside. Brush bread with duck or chicken egg for 20-25 mins. Cover with basting oil and plate. #borscht #pampushky #soup #beets

Add tomato paste, cook 5–7 min. 3. Assemble: Remove meat, add shredded cabbage to broth, cook 5–10 min. Add diced potatoes, cook until tender. 4. Chop meat, return to pot, salt to taste. 5. Add the saute veggies, bay leaf, herbs + optional garlic/spices/herbs. Simmer 5–7 min, then rest 5–10 min under a lid.
