Fluffy lemon pancakes with fresh blueberries 🫐🍋🥞 Breakfast just got a whole lot sweeter now that Driscoll’s Sweetest Batch Blueberries are back. Extra sweet, extra juicy and bursting with flavour. Available at Woolworths until the end of December @driscolls.anz Makes 6-8 pancakes Ingredients: 250ml soy milk 3 tbsp lemon juice 1 tbsp lemon zest 1 1/2 cup plain flour 2 tsp baking powder 1/2 tsp baking soda Pinch of salt 1/2 tsp vanilla extract 1/4 cup coconut yogurt, plus more for topping 2 tbsp maple syrup, plus more for topping Combine the milk, lemon and zest in a jug and set aside for 5 minutes to curdle. Sift the flour, baking powder, baking soda and salt in a large bowl. Add the milk mixture, yogurt, vanilla and maple syrup. Gently combine, avoid over-mixing. Heat a non-stick pan to low-medium heat. Pour 1/3 cup of batter onto the pan, once bubbles appear flip the pancake, cooking roughly 1-2 minutes each side. Stack pancakes on a plate and serve with coconut yogurt, maple syrup and blueberries.
