I’m shaping a Honey, Brown Butter, and Oat Porridge Sourdough today, and let me tell you, the porridge makes all the difference. Here’s how I do it: I start by cooking the oats in water with a touch of honey and a pinch of salt. Once the oats have absorbed the water and become nice and creamy, I finish it off with some rich, nutty brown butter. This gives the porridge an incredible depth of flavour.

THMAYBE THE BEST FLATBREAD RECIPE IVE EVER MADE? (I had a crocodile help me)
normally I have some long drawn out thing about life, and love, and food and the intertwining messy mix of it all - yeah this one is flatbread. let’s just let the results speak for themselves.
make this, call me afterwards and if you want to send me like a gift, name your kid after me, or I dunno - were accepting all sorts of weird crypto over there. it’s a simple recipe, it tastes immaculate, it’s honestly just a real point of pride because i’m lazy and kind of dumb when it comes to things like this and this is just good bread.
RECIPE
4 cups of flour
1 tablespoon of salt
3 tablespoons of olive oil
wet 💦
1 cup of lukewarm water
3 teaspoons of yeast
2 teaspoons of sugar
1. combine yeast sugar and water together and let it bloom for about 5 minutes
2. combine dry ingredients together along with olive oil.
3. add your wet to dream and knead together until you have a smooth ball with some spring to it (5-8 minutes)
4. let rest somewhere warm for 1-2 hours, or until it’s doubled in size.
5. divide the balls in 8 even pieces, cover with a cloth on a tray and let proof a bit more for about 30 minutes
6. let that @oonihq rip, or a very hot will do. throw some snow in there for good measure, I mean might as well. brush it in a gorgeous garlic butter after (maybe we need like a quick snip of how to make that? y/n?)
