Let’s make Ciabatta! 🙌🍞 Sometimes the way bread recipes are written, with lots of technical words, can be off-putting for bread beginners, making it difficult for them to start a bread making journey. With this ciabatta recipe, I have tried to keep the idea of bread making as simple as possible by sharing basic and yet essential little techniques that will improve your bread making skills. The only challenge of this recipe is the hydration! It’s a wet dough! ☝️ Here are a few main tips and tricks for working with a high hydration dough: 👇 1 - If you are a beginner, use a large bowl to make the dough and knead the dough inside the bowl. There’s no need to put it on the work surface and make a mess. You’ll stress out and start adding lots of flour because it will be too hard to handle. When kneading, use one hand to hold the bowl and the other to knead the dough, keeping the hand holding the bowl always clean. 2 - Strengthen the gluten of the dough by giving the dough a few folds during the fermentation. The method I’m using in the video is called “coil fold technique” and is a type of strengthening action used to help develop gluten in the dough during the fermentation stage. By using this method you’ll notice that the dough will become more and more easy to handle without adding any extra flour! And remember, baking bread is a truly satisfying process and there’s nothing like the feeling of creating your own fresh loaf. So make sure you take things slow and enjoy the process! Did you know that bread making isn’t really as hard as you think watching complex videos! Here is a simple breakdown of all the steps required to make a fluffy bakery style bread! Recipe All purpose flour (maida) - 360g or 3 cups Milk - 240g or 1 cup Active dry yeast - 7g or 2tsp Sugar - 30g or 2tbsps (add half in wet half in dry) Salt - 9g or 1/2 tbsp Milk powder - 8g or 1 tbsp Softened butter 60g or 1/4th cup Yield - 550g bread loaf Loaf size - 8inch loaf or half kg loaf Baking - pre heat oven to 180*c with fan mode on, bake for 30minutes - 1. Activate active dry yeast in room temp (22*c - 30*c) milk, mixed with half of the sugar. 2. In a big bowl, add all purpose flour (maida), sugar, salt and milk powder. Add the bloomed yeast and start kneading. 3. Once the dough comes together and no dry flour is left, add softened butter. Continue to knead for 15 minutes and then perform windowpane test. This indicated adequate gluten formation in your dough to facilitate a good rise. 4. Shape dough into a ball and let the dough rise till it triples in size (bulk fermentation). This may take anywhere between 1 hour - 3 hours depending on the temperature. 5. Deflate the dough and shape into your preferred bread. Let rise again till double in size (second proofing). 6. Apply some butter on the loaf and bake in a pre heated oven at 180*c with fan mode on for 30 minutes. 7. Always let bread cool down (do not cover) before demoulding and cutting. Country bread with toasted sesame seeds 🥖☁️⁣⁣⁣⁣⁣⁣ Made with 1 g yeast and fermented for 13+ hrs for an artisan-style loaf with a crispy crust and open crumb 😮‍💨 ⁣⁣⁣⁣⁣⁣ For one small loaf:⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Equipment:⁣⁣⁣⁣⁣ Large baking bowl⁣⁣⁣⁣⁣ Kitchen scale⁣⁣⁣⁣⁣ Thermometer⁣⁣⁣⁣⁣ 8-inch oval banneton⁣⁣⁣⁣⁣ Dutch oven⁣⁣⁣⁣⁣ Lame or razor blade⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Ingredients:⁣⁣⁣⁣⁣ 300 g bread flour (I'm using @mulinocaputo Cuoco flour)⁣⁣⁣⁣⁣ 1 g instant dry yeast⁣⁣⁣⁣⁣ 240 g water at 27°C/80°F (use a little less water if you're not used to working with wet doughs)⁣⁣⁣⁣⁣ 6 g salt⁣⁣⁣⁣⁣ 20 g toasted sesame seeds⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Instructions:⁣⁣⁣⁣⁣ 1. Make the dough⁣⁣⁣⁣⁣ Add flour and instant yeast to a large baking bowl. Give it a quick stir. Next, add water and mix with your hands or a silicone spatula until combined. This step should not take longer than a minute or so. ⁣⁣⁣⁣⁣ Cover the bowl and let it rest for 30 minutes.⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ After 30 minutes, sprinkle salt over the dough and mix with your hands for 2-3 minutes (I'm using the Rubaud mixing method if you want to YouTube that) or in a stand mixer on low speed. Mix a little less if you're using a stand mixer — you simply want to incorporate the salt into the dough. ⁣⁣⁣⁣⁣ ⁣⁣⁣⁣ Add sesame seeds and continue mixing for another minute.⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ Transfer the dough to a clean dish/bowl. Cover the bowl and transfer to a warm-ish spot at around 24°C/75°F for 3-4 hours. ⁣⁣⁣⁣⁣ Coil fold the dough every hour. It should rise about 60% during this time.⁣ ⁣⁣⁣⁣⁣ 2. Shape⁣⁣⁣⁣⁣ Dump the dough onto a floured work surface and shape: ⁣⁣⁣⁣⁣ Fold in the right and left sides, and roll down into a log. Pinch and tuck the short sides. ⁣⁣ Transfer to a banneton, seam side up. ⁣⁣⁣⁣⁣ Cover the banneton and place the dough in your fridge for 10-15 hours. ⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ 3. Bake⁣⁣⁣⁣⁣ Place a Bread Pan or large Dutch oven in the oven. Preheat for 45-60 minutes at 500°F/260°C.⁣⁣⁣⁣⁣ Remove the preheated Bread Pan from the oven. Tip the bread into the pan, seam side down.⁣⁣⁣⁣⁣ Score the surface of the bread. Put the lid on and bake for 20 minutes.⁣⁣⁣⁣⁣ After 20 minutes, remove the lid, and turn down the heat to 430°F/220°C. Bake for another 10-15 minutes until golden 💕
