Carbs aren’t “the devil.” They’re the reason you can think, train, and function. A few science-based facts people conveniently forget: → Your brain relies heavily on glucose for energy (yes, even if you’re “good on keto”). → Carbs are how you store glycogen (your “battery”) in muscles and liver, key for - performance - recovery - and that “I actually have energy today” feeling. → Carbohydrate quality matters more than the label “carbs”: fiber-rich, minimally processed carbs are consistently linked with better long-term health outcomes than refined, ultra-processed carb sources. → “Carbs spike insulin” is not the scandal people think it is. Insulin is a normal, essential hormone. The issue is chronically high calories, low fiber, low activity, poor sleep, and ultra-processed food. Not a potato existing. If carbs were the problem… Blue Zones wouldn’t exist. The longest-living populations on earth (Blue Zones) don’t live on protein bars and cauliflower rice. They consistently eat carbs, beans, whole grains, fruit, starchy veg (hello, sweet potatoes), and traditional breads. They’re eating high-quality, mostly minimally processed carbs as part of a plant-forward lifestyle. And as an Italian nutrition coach, I have to say it: the Mediterranean diet isn’t “low-carb.” It’s high-quality-carb. Think legumes, fruit, veg, whole grains, potatoes, and yes, pasta in a balanced plate (with fiber, protein, and healthy fats). So no, you don’t need to fear carbs. You need to upgrade your carbs!
