HE📍Cordial, Oslo
Cato Wara og hans team av flinke folk har flyttet til vestkanten. Nærmere bestemt Frognerveien. Cordial betyr hjertelig og det er akkurat det Erik og jeg opplevde i går kveld da vi på vei til konsert bestemte oss for å stikke innom for en matbit på nabolagets nye spisested. En liten matbit ble til et fullt måltid med det ene høydepunktet etter det andre. Deilig brød med rørossmør, villsvinsalami med trøffel etterfulgt av blåskjell escabeche, en av mine favoritttapas. Med et dryss av røkt pimenton. Perfekte kamskjell i en deilig syrlig og kremet saus, en kveite crudo med en slags rødbetesalmorejo som blåste oss begge i bakken. Så kom piggvaren på bordet servert med nydelige poteter, radicchio og en utsøkt tomatsalat med aprikosvinaigrette. Men ikke bare det. Iberico-kjaker som falt fra hverandre imøte med en gaffel på en dyne av fluffy potetpuré med nok smør, for å si det slik, toppet med kraften fra de braiserte kjakene smakte helt fenomenalt i den kjølige høstkvelden. Til dessert fikk vi en mega-canele med is laget på ekte heidalsost. Brunost har aldri smakt bedre.
Vi fikk anbefalt en flaske Jiménez-Landi Piélago 2018 av hyggelige Preben. Et knakende godt valg.
Jeg fikk også sitte under bildet av Salvador Dali tatt i vårt elskede Portlligat.
Vi kom oss på konsert, men var fristet til å gå de 200 meterne hjem for å ta en cowboystrekk, for mette ble vi. Å få en slik restaurant i nabolaget er ikke bare etterlengtet, men en gave for oss på Frogner. Trivelig og velkommen betjening, nydelig mat og drikke og ikke minst har de a la carte, noe jeg liker veldig godt. Det er ikke alltid man er klar for en smaksmeny.

🍎🍓It’s safe to say that most people understand that cordial is not a health food.
But there is definitely a huge difference in options available.
Before I started reading labels, I thought cordial simply wasn’t ideal because of the excess sugar.
But the majority of cordials also contain:
❌ preservatives
❌ artificial food dye
❌ artificial sweeteners
While I understand some people require a sugar free option, I personally bought this option thinking it was better for me.
It is great that there is now an option on the shelf that contains more simple, recognisable ingredients.

PIRefreshing Lime and Mint Cordial 🍋
Looking for the perfect summer sip? This homemade lime and mint cordial is zesty, sweet, and oh-so-refreshing! 🌿✨
Here’s how to make it:
1. Combine lime zest, sugar, and water in a saucepan and bring to a boil. Let it cool.
2. Add fresh lime juice, boil again, and stir in ripped mint leaves.
3. Cool, strain, and bottle!
Mix one part cordial with six parts water (or soda water) and serve over ice. Add a lime wedge or fresh mint for extra flair.
Tip: Swap limes for lemons if you need a twist on this classic!

ABI have had so many people ask me how to make elderflower cordial at home, and the answer is that it's actually super simple! All it takes is a little patience, a big pan, and a LOT of sugar 😂 Check out my previous reel for tips on foraging your own elderflower!
12-15 elderflower heads (or more if they're small)
4-5 lemons
A few sprigs of mint (optional)
Water
At least 1.5kg sugar
30g citric acid (optional but will help it keep longer)
1. Harvest your elderflower on a bright, sunny morning, so that there's plenty of pollen to create good flavour!
2. When you get home, spread out your flower heads so that any critters can crawl away. Then snip off any big green stems and pop your elderflower in a big bowl.
3. Add all the lemons, sliced, and optionally a couple of sprigs of mint. Add 1.5-2L water or to cover the flowers, and let sit overnight, covered on the counter.
4. The next day, strain out your solids, and weigh how much elderflower water you have. Add an equal amount of sugar (e.g., for 1.5L water, add 1.5kg sugar), and the citric acid.
5. Transfer to a large pan and bring to a boil while you sterilise some bottles (wash well then pop in a 100°C oven for a few minutes). Let the cordial simmer for 5-10 minutes or until all the sugar is dissolved.
6. Sterilise a funnel and ladle or jug by boiling them for a few minutes or using sterilising solution, then use to bottle your elderflower - hot cordial into hot bottles means that it will last longer! Seal well with a clip top lid.
7. Your elderflower cordial should store for at least 3-4 months in a cool cupboard (and mine has lasted much longer, historically!), but keep it in the fridge once opened. Enjoy!!

ODReady for some seriously refreshing rhubarb? Drink this in. Try this homemade rhubarb cordial for a blast of fizzy freshness – mix it with sparkling water and you’re good to go. It’ll keep in the fridge for a whole month, too.
📦Ingredients:
● 450g rhubarb
● 300ml water
● 150g golden caster sugar
● Zest and juice of 1 orange
● 1 tbsp grated ginger
🌞Method:
1. Start by making the syrup: in a pan add the water, golden caster sugar, orange zest and
juice and ginger.
2. Bring to a simmer, then add the chopped rhubarb and cook until tender, for about 5
minutes.
3. Blend until smooth and pour into a container. Let cool, then store in the fridge.
4. To serve, add about 1-2 tablespoons of cordial in a glass and top with sparkling water.
How to store: Store in the fridge for up to 1 month.
