SPICY CUCUMBER SALAD inspired by Din Tai Fung & “oi muchim,” the iconic Korean side dish. File this Asian classic under refreshing recipes to make on repeat. It’s part sweet, part spicy and part tangy , with a craveable crunch too! PS: if you loved this, let me know if you’d like me to share my best salad recipes with you and I’ll send the full collection over via DM :) Start by dicing 2-3 large green cucumbers into half inch thick rounds. Generously salt the cucumbers and let them sit for 20-30 minutes or so, then rinse with cold running water and pat dry completely. To a heat proof bowl, add: - The dried cucumbers - 3-4 cloves of minced garlic - 2-3 tsp gochugaru/ chilli flakes - 2-3 tsp sesame seeds - 2 tbsp light soy sauce - 2 tbsp rice vinegar / - 1 -2 tsp sugar/ honey Heat 1-1.5 tbsp of sesame oil until sizzling. Then pour this over your cucumber mixture. Mix well and taste to adjust seasonings. Let the cucumbers marinate for at least 15 minutes and longer if you can (4-6 hours would be ideal). For restaurant-style serving (inspired by the presentation at Din Tai Fung!), stack them on a plate, pouring the leftover marinade on top. Serve chilled & DIVE IN! Ingredients: 12 baby cucumbers (sliced thick) 1 tsp salt 2 tbsp minced garlic 2 tbsp rice vinegar 2 tbsp soy sauce 1 tbsp toasted sesame seed oil 1 tbsp toasted sesame seeds 1 tsp sugar 2 tsp chili crisp (oil and crunchy part) How to: Start by slicing cucumbers on the thicker side. Add them into a bowl with salt. Mix and set aside. In a separate bowl add minced garlic, rice vinegar, soy sauce, toasted sesame seed oil, sesame seeds, sugar, and chili crisp. Yall asked and I’m answering. The first recipe from this week’s meal prep is for these marinated cucumbers! They’re a little sweet, a little spicy, a little salty, a little tangy and such an umami bomb, they’re perfect for a quick snack in between meals or as a part of a larger one. The recipe below is a baseline, but you can add more (or less) of any of these ingredients to get your perfect marinade. If you don’t have date sugar, you can omit, or substitute with mirin, honey, agave, coconut sugar, white sugar or leave it out completely! Also, I don’t add salt because I find the soy sauce salty enough, but adjust for your tastes! Get the recipe 👇🏼 there and share this with someone who would love them! Which recipe should I share next? Umami Bomb Marinated Cucumbers 1-2 Persian or English cucumbers 2 tsp garlic paste 1 tsp date sugar 2 tbsp low sodium soy sauce (coconut aminos & tamari work as well) 2 tbsp rice vinegar 2 tbsp chili crunch, spicy or mild 1 1/2 tbsp umeboshi furikake 1 tbsp sesame oil 🥒 Cut cucumbers into desired chunks and smash with the side of a knife to flatten 🥒 Add to a bowl along with remaining ingredients. 🥒 Mix with spoon or shake with top on bowl to fully coat with marinade. 🥒 Allow to marinade for at least 15 mins before eating. 🥒 Eat as a solo snack or with rice, veggies and/or meat for a full meal.
