I don’t even know the proper name of these… but I need your help 😉 These ultra-soft flatbreads filled with creamy potato and melted cheese are dangerously addictive. I’ve made them twice this week — they’re so tender they practically melt in your mouth. Does anyone know what they’re called and where they originate from? Dough Flour — 700 g Warm milk — 500 g Salt — 14 g Sugar — 10 g Instant dry yeast — 3 g Egg yolk — 1 egg Filling Potatoes — 400 g Mozzarella — 500 g Salt — to taste Method Divide the dough into 60 g balls. Shape the filling into 90 g balls, enclose the filling inside the dough, pinch to seal, then gently roll into 8–9 inch flat circles. Fry on pan from both sides and gently brush with melted butter. #recipe #potato #cheese #flatbread

I always use my homemade taco seasoning which can be found on my page and in all of my cookbooks & meal plans. This recipe also calls for my homemade salsa which is also in my cookbook and meal plans. www.Kristysketolifestyle.com/shop RECIPE - Makes 28 pieces INGREDIENTS: 4 large chicken breasts 1 cup chicken broth 4 Tbsp homemade taco seasoning 8 oz cream cheese 1 cup homemade salsa 4.5oz can of green chiles 1/4 cup shredded Colby Jack cheese 1/4 cup shredded mozzarella cheese 4 Cutdacarb flatbreads DIRECTIONS: 1. Pressure cook the chicken, broth and taco seasoning for 12 minutes on high. 2. Do a quick release and then transfer the chicken to a mixer and shred it. 3. Add in the cream cheese, green chiles and salsa and mix until combined. 4. Working with just one flatbread at a time, lay it horizontally on a cutting board. 5. Place 1/4 of the chicken mixture all along the edge closest to you. 6. Roll it up tightly and then cut into 7 equal pieces. *If you place the rolls wrapped in Saran Wrap in the fridge for 20-30 min, they will cut easier. 7. Repeat with the remaining flatbreads and chicken mixture. 8. Grease a springform or pie pan and then place the pieces upright in the pan. 9. Top with the shredded cheeses and bake for 20 minutes. 10. Remove the outer layer of the springform pan and enjoy! Potato and Cheese Flatbreads 🫓 (Yields 8 servings) Ingredients Filling: • Potatoes: 800 g • Cheese (melting, e.g. suluguni/mozzarella): 300 g • Paprika, dried garlic, herbes de Provence: ½ tsp each • Salt: to taste (≈1 tsp) Dough: • Flour: 500 g • Warm water: 280–300 ml • Olive oil: 2 tbsp + 1 tbsp for bowl • Salt: 1 tsp For brushing: • Butter: 20 g Quick Instructions 1. Dough (start first – rests 2 hours): Sift flour, mix with warm water, salt, and 2 tbsp oil. Knead until soft and non-sticky (add water if needed). Form a ball, place in oiled bowl, cover, rest 1 hour. Knead briefly, rest another hour. 2. Filling: Boil potatoes until soft, mash hot. Mix in grated cheese, spices, and salt. Cool slightly, form 8 balls (≈130 g each). 3. Assemble: Divide rested dough into 8 balls (≈100 g). Roll each into a circle larger than filling balls. Place filling in center, seal edges like a pouch. Gently flatten/roll to ≈20 cm diameter. 4. Cook: Fry in dry hot skillet, 2 minutes per side until puffed and golden. 5. Finish: Brush hot flatbreads generously with melted butter. So good!Use as: Wraps for sandwiches To mop up a curry As a base for pizza 2 ingredient flatbreads- makes 6 regular or 8 small (I made 8 small) 225g self raising flour (gf works fine too) 250g greek yoghurt *if you don’t have self raising flour - sieve 1.5 teaspoon baking powder into 225g plain flour Measure the flour into a bowl, stir through the yoghurt with a fork. Turn the mix out onto the work top and knead into a round smooth ball. If the dough is very sticky add more flour. This may take a few minutes. Push the ball down to flatten and divide into 6 or 8 pieces. Roll those pieces into round balls. Dust the worktop with flour and roll the balls out with a rolling pin. If the dough sticks add a bit more flour to the rolling pin. Roll until nicely even and thin, try to keep the round shape if you can. Repeat. Warm a griddle or frying pan on a medium to high heat. Add the first flat bread, cook until bubbles appear 2-3 minutes then flip and cook on the other side. Adjust the heat if needed. Repeat. If you’re impatient like me, use 2 frying pans at the same time. You can brush with melted butter if you like after. If you find the bread a bit dry the next day, warm them for a few seconds in the oven or microwave to soften. Store in an air tight container in the fridge for 5 days.
