Be sure to click the link in the @allrecipes bio or continue reading for the full recipe! 🔗 Ingredients: 1 1/2 pounds baby gold potatoes 1 tablespoon kosher salt, plus more to taste 1/2 cup mayonnaise 2 teaspoons yellow mustard 1/4 cup sweet pickle relish 1/4 cup finely chopped green onions 1/2 teaspoon freshly ground black pepper 1/2 teaspoon paprika chopped chives for garnish Directions Cover potatoes by 2 inches with water in a large saucepan. Add salt and bring potatoes to a boil over high heat. Cook until potatoes are fork tender, about 12 minutes, and drain. When potatoes are just cool enough to handle, cut each one in half lengthwise, to most resemble the shape of an egg. Use a small measuring spoon or melon baller to scoop out the center of each potato, leaving about a 1/8-inch border. Add potato flesh to a bowl. Mash potato flesh with a fork and stir in mayonnaise, mustard, relish, green onions, and pepper. Season with salt to taste. Spoon or pipe mixture into each potato “shell” and sprinkle with paprika. To save the recipe with MyRecipes, simply tap the heart icon. 🩷 Ingredients ⁃ Potatoes, scrubbed and sliced into 1-inch rounds ⁃ 1 tablespoon unsalted butter, melted ⁃ 1 tablespoon extra-virgin olive oil ⁃ 1 teaspoon dried parsley flakes ⁃ ½ teaspoon ground pepper, plus more for garnish ⁃ ¼ teaspoon salt ⁃ 3 slices applewood-smoked bacon ⁃ ¾ cup lower-sodium chicken broth ⁃ 5 medium cloves garlic, peeled and smashed ⁃ ¾ cup shredded sharp Cheddar cheese ⁃ ¼ cup reduced-fat sour cream ⁃ 2 small scallions, thinly sliced (3 tablespoons) 1. Preheat oven to 500°F with rack positioned in upper third of oven. 2. Combine potato rounds, melted butter, 1 tablespoon oil, 1 teaspoon parsley, ½ teaspoon pepper and ¼ teaspoon salt in a large bowl; toss to coat. Arrange in a single layer in a 9-by-13-inch metal baking pan. (Do not use a glass dish, which could shatter.) Roast, flipping once, until browned on both sides, about 30 minutes. 3. Meanwhile, heat a medium skillet over medium-high heat; add 3 slices bacon and cook, flipping once, until crispy, 4 to 5 minutes, adjusting heat as needed to prevent overbrowning. Transfer to a paper towel–lined plate. When cool enough to handle, coarsely chop and set aside. 4. Carefully add ¾ cup broth and the smashed garlic to the pan with the potatoes; distribute ¾ cup Cheddar evenly over the tops of the potatoes. Continue roasting until almost all of the broth is absorbed, the cheese is melted, and the potatoes are very tender, about 10 minutes more. 5. Transfer the potatoes and garlic to a serving platter; dollop with ¼ cup sour cream and sprinkle with the chopped bacon and sliced scallions. Garnish with pepper, if desired.

Line a pan with parchment paper * Place potatoes in a large pot and cover with water * Bring the water to a boil and simmer until the potatoes are tender, about 12-15 minutes * Drain the water and add to potatoes to the pan * Using a glass, smash the potatoes until they are flat. You want to do this carefully so they remain all together. * Drizzle with olive oil and add salt, garlic, and pepper * Add to the oven and bake for 20-25 minutes, until they’re crispy. * Remove from the oven * Add the cheese to the potatoes and bake another 2-3 minutes. * Remove and add your toppings. Garlic butter smashed potatoes dipped in @terrapinridgefarms hatch chile dip! Smashed potatoes are one of my favorite types to make. They get so crispy around the edges but still have a soft center! You can pair them with a variety of dishes or eat them as an appetizer! Ingredients: Little potatoes Salt & pepper Parmesan Olive oil Garlic butter: Butter Salt & pepper Garlic powder or fresh garlic Parsley Boil potatoes in water until they are fork tender. Drain out water and oil a baking sheet. Space potatoes out and use a piece of parchment and a jar or something with a flat bottom to smash the potatoes. (As seen in the video) Repeat with all potatoes. Drizzle tops with olive oil, salt, and pepper. Add a thin layer of grated Parmesan cheese over the top. Bake at 400F for 12-15 minutes. If you want them more crispy, broil for 4-5 minutes after baking. Once they are out of the oven, brush them with the garlic butter. RECIPE ↓ Ingredients 🥔 Yukon Gold potatoes (or russet), peeled 🫒 High-heat oil (avocado, safflower, or peanut oil) 🧈 Butter 🧄 Garlic cloves 🌿 Fresh rosemary & thyme 🧂 Salt & black pepper 🍲 Vegetable stock (or chicken stock) ⸻ How to Make 1️⃣ Prep the Potatoes Preheat oven to 425°F. Slice potatoes into 1-inch thick rounds. For a polished look, trim into even cylinders using a small cutter (optional but pretty). 2️⃣ Soak potatoes in cold water for 15 minutes, then pat completely dry. 3️⃣ Sear Heat oil in an oven-safe skillet over medium-high heat. And they’re EASY 🥔😍 Comment SMASHED & I’ll send you all the goodies in this post 💌 Ingredients: 1 bag baby golden yellow potatoes 20 garlic cloves, divided 1 tbsp salt, plus more for boiling 1 tsp pepper 2 tsp chili pepper flakes, divided 3 tbsp grated Parmesan cheese 1/2 cup white cheddar cheese, shredded Olive oil 4 tbsp salted butter 2 tbsp parsley, chopped, divided Garlic Dipping Sauce: 3/4 cup mayo 1 tsp lemon juice Roasted garlic, mashed 1 tsp salt 1/2 tsp pepper 1 tbsp parsley, chopped How to Make It: Boil potatoes whole in well-salted water until fork tender. Drain and let cool 20 minutes. Wrap about 10 garlic cloves in foil with a drizzle of olive oil. Roast at 400°F until soft and golden. Let cool. Add cooled potatoes to a large bowl. Here’s the potato rule I follow now: • Start in cold water (so they cook evenly edge to center) • Salt the water well (season from the inside out) • Cover by about 1 inch / 2–3 cm • Bring to a boil, then reduce to a gentle simmer — a hard boil breaks them • Check at 20 minutes • Always test the biggest potato • A thin knife should slide in with slight resistance If they crack or fall apart, they’re overcooked. It sounds simple. But once you nail this, everything changes — mashed potatoes, salads, all of it.
