THΕύκολη Deep Dish Pizza 🫶🏼
Για τη ζύμη :
120 ml χλιαρό νερό
1 κουταλάκι γλυκού ζάχαρη
1 κουταλάκι γλυκού μαγιά
240 γρ αλεύρι για όλες τις χρήσεις
1,5 κουταλιά σούπας καλαμποκάλευρο
1 κουταλάκι γλυκού αλάτι
30 γρ λιωμένο βούτυρο
1 κουταλιά σούπας ηλιέλαιο
Για τη σάλτσα :
2 κουταλιές σούπας ελαιόλαδο
1 μικρό κρεμμύδι κομμένο στο μούλτι
1 σκελίδα σκόρδο ψιλοκομμένη
αλάτι - πιπέρι κατά βούληση
1 κουταλάκι γλυκού ρίγανη
1/2 κουταλάκι ζάχαρη
2 κουταλάκια γλυκού πελτέ
1 συσκευασία σάλτσα ντομάτας(500γρ)
Προαιρετικά λίγο μπούκοβο
Για τη γέμιση :
350 γρ μοτσαρέλα
• Στο χλιαρό νερό ρίχνουμε τη ζάχαρη,τη μαγιά και ανακατεύουμε.Αφήνουμε 5 λεπτά να ενεργοποιηθεί.
Σε ένα μπολ ανακατεύουμε το αλεύρι,το καλαμποκάλευρο,το αλάτι.Προσθέτουμε το βούτυρο,το λάδι και τέλος τη μαγιά που ενεργοποιήσαμε.Ζυμώνουμε μέχρι να ενωθεί η ζύμη,Λαδώνουμε το μπολ,καλύπτουμε με μεμβράνη και αφήνουμε για 1 ώρα.
• Σοτάρουμε το κρεμμύδι,όταν πάρει χρώμα προσθέτουμε το σκόρδο και τον πελτέ.Ρίχνουμε αλάτι,πιπέρι,μπούκοβο,ζάχαρη και τέλος τη σάλτσα ντομάτας.Χαμηλώνουμε τη φωτιά και βράζουμε μέχρι να πήξει για 10-15 λεπτά.Οταν είναι έτοιμη προσθέτουμε τη ρίγανη.
• Βουτυρώνουμε το ταψί και απλώνουμε τη ζύμη (όχι μέχρι πάνω).Προσθέτουμε το τυρί,το πατάμε ελαφρώς με το χέρι και απλώνουμε ομοιόμορφα τη σάλτσα.Ψήνουμε σε προθερμασμένο φούρνο,στους 210 αντιστάσεις για 25-30 λεπτά.Αφήνουμε στο ταψί για 10 λεπτά πριν την κόψουμε.
*Οι αναλογίες είναι για ταψάκι 23 εκατοστά.Για μεγαλύτερο διπλασιάστε τη συνταγή.

SNVeggie & Bread Baked Dish
I promise you’ll love this!
Serves 2
5 slices of bread
1 tbsp butter
1 tbsp Ketchup
Butter your baking dish. Cut the edges of the bread & then cut them in cubes. Layer it on the bottom & sides of the bakedish. Brush the bread with butter, and spread the ketchup on the bread too.
For the veggies
1 tbsp butter
1 onion, cut in rounds
1/2 capsicum, cut in rounds
1 tomato, cut in rounds
1 cup vegetables (I’ve used broccoli, babycorn & mushroom)
Salt to taste
1 tsp butter
1 cup milk
1/3 cup cream
1/3 cup processed cheese
1 tsp pepper
1 tsp oregano
1 tsp chilli flakes
Assembly
1/3 cup mozzarella cheese
1/3 cup processed cheese
2-3 tbsp bread crumbs
8-10 basil leaves
Add the veggies to the bake dish lines with bread. Top it up with the cheese sauce. Add mozzarella cheese, processed cheese & breadcrumbs. Bake it in a preheated oven for 20-25 minutes at 180°C till the top becomes golden brown. Garnish with fresh basil leaves. Serve hot & dig in.!

NOContinental Dishes - that phrase from the 70’s-80’s in India pretty much sums up an average Indian households kitchen experiments on a weekend night.
In our home this dish was a staple on Sunday — and trust me there was no other way to make it. We’d probably have a few Italians & Americans wondering what in the world are we doing to perhaps a classic creamy pasta dish or a plain little Mac and Cheese (Velveeta anyone?), but I remember having fed this dish to many non-Indian folks and they’ve spun around their thoughts in wonder.
We Indians love to spice up and layer our dishes dont we!? Well this ‘chatapata’ macaroni bake is no stranger to a chaos of flavors. It’s hearty, hot, perfect for cool weather or Sunday meals with some garlic bread on the side: but the real deal is a garlicky white sauce, the toppings which are literally the holy grail ! Think processed white cheese so it doesn’t melt but infact blankets the bake like a chewy, salty, caramelized cheese cover, and the dotting of ketchup atop which concentrates into a sweet-tart umami interlude between bites.
The key is in the processed, common pantry ingredients to really put this dish together and of course a ton of veggies (feel free to play around with these) - and then, it’s all a hit of nostalgia.
Chatpata Macaroni Bake
Ingredients
100gms Elbow Macaroni
1 cup Peas & Carrots
Butter + Oil
6 cloves Garlic
1 Red Onion (diced)
2 tsp Oregano Seasoning
1 cup Milk
1.5 cups Processed White Cheese (divided)
1/4 cup Concentrated Stock of Choice
Salt + Pepper
1 Green Capsicum julienned
Ketchup
