No chance of leftovers with Chef Alej's twice cooked crispy potatoes smothered in a delicious garlic herby oil. We gobbled these UP! Recipe 👇 Ingredients 1 kg washed potatoes 3-4 garlic cloves ¼ cup picked rosemary leaves ¼ cup picked thyme leaves 1 lemon, zested 1 ½ tsp smoked paprika ¼ tsp sea salt Pinch of ground black pepper ½ cup olive oil Method 1. Preheat the oven to 220°C. 2. Place the potatoes in a pot of salted water, cover with water and bring to the boil. Cook for 10 mins, or until the potatoes are tender. Drain well and place them on a baking tray lined with balking paper. 3. Firmly press down each potato on the tray using a cup or a small plate until roughly flatten. 4. Place the garlic cloves, rosemary and thyme into a mortar and pestle and pound firmly until a paste forms. Season with salt, pepper and the paprika. Add the olive oil and lemon zest and mix well until combined. 5. Brush the potatoes with half of the garlic herb oil. Place into the oven and roast for 20 minutes. Remove from the oven, flip over, brush with the remaining garlic herb oil and roast them for further 20 minutes, until golden and crispy. 6. Remove the potatoes from the oven and serve hot in a bowl. #easter #potatoes #roastpotatoes #easter #easterlunch

AD Easter, my way - Slow roasted harissa lamb, potatoes, Greek salad + tzatziki 🍅🥒🫒 All made using the wide selection of quality ingredients from @sainsburys 🧡 Ingredients (serves 4): -1.1 kg bone-in leg of lamb -fresh rosemary -5 garlic cloves, sliced -2 tbsp extra-virgin olive oil -300 ml lamb stock -1½ tbsp harissa paste -juice of ¾ lemon -1 tbsp Dijon mustard -1 tsp dried oregano -1 tsp paprika -800 g potatoes, cut into wedges Tzatziki -250 g Greek yoghurt -½ cucumber, grated -1 garlic clove -fresh dill, finely chopped -juice of ½ lemon -1 tbsp olive oil Greek Salad -300 g tomatoes, chopped -½ red onion, thinly sliced -100 g feta cheese -olives -1 tbsp red wine vinegar -1 tsp oregano -1 tsp olive oil Recipe: -Pat the lamb dry and make small incisions across the top using a knife, pushing slices of garlic and small sprigs of rosemary into the cuts. -Rub the lamb all over with olive oil, paprika, dried oregano, salt and pepperthen place into a large roasting tray. -In a bowl, whisk together the lamb stock, harissa paste, lemon juice and Dijon mustard, then pour around the lamb. -Cover the tray tightly with parchment paper and foil and cook at 180°C for about 2-2.5 hours, until the lamb is very tender. -Remove the foil and parchment, add the wedged potatoes to the tray and toss them in the cooking juices, then return to the oven uncovered at 220°C for around 35 minutes, until the lamb is browned and the potatoes are tender and caramelised -Let the lamb rest for 10 minutes before shredding or slicing. -To make the tzatziki, mix the Greek yoghurt with grated cucumber, garlic clove, chopped dill, lemon juice, olive oil and salt. -For the Greek salad, combine the tomatoes, red onion, olives, then drizzle with red wine vinegar, 1 tsp olive and 1 tsp oregano and combine. Place the feta block on top. -Serve the lamb with the roasted potatoes, tzatziki and Greek salad. #TogetherWeEat #roastlamb #easterlunch #greeksalad

Like bring-this-to-Easter-and-still-have-leftovers big. It’s fluffy, chocolatey, pastel perfection and takes barely any effort. We love a shortcut dessert moment. If you’re hosting a smaller crowd you can totally halve it — but if you’re feeding a group, this one’s it. Serve with graham crackers, fruit, pretzels, cookies… whatever you love to dip. SAVE this for Easter weekend + send it to whoever is on dessert duty 🐣💛 #easterdessert #easter #eastersunday #easterlunch

Oven-baked camembert is an easy starter to whip up for friends and family at home! 🧀 Ingredients ⬇️ 1 whole camembert cheese wheel 2 cloves garlic, sliced 1 sprig of fresh rosemary 1/4 cup crushed walnuts Salt and black pepper, to taste Bread or crackers for serving Method ⬇️ 1. Preheat your pizza oven to 180°C. If using a wood-fired pizza oven, make sure to regulate the temperature by adjusting the amount of wood and coal. You can also use an infrared thermometer to check the oven temperature. 2. Remove the packaging from the camembert cheese and place it on a small cast iron skillet or oven-safe baking dish. 3. Use a sharp knife to make shallow cuts in the top of the cheese, creating a criss-cross pattern about 1 cm apart. 4. Insert the garlic slices and rosemary sprig into the cuts in the cheese. 5. Sprinkle the crushed walnuts over the top of the cheese, making sure to cover it evenly. 6. Season with salt and black pepper to taste. 7. Place the skillet or baking dish with the cheese in the pizza oven and bake for 15-20 minutes or until the cheese is melted and bubbly. 8. Remove the skillet or baking dish from the oven and let it cool for a few minutes. 9. Serve the baked camembert with bread or crackers for dipping, and enjoy the warm, gooey cheese with the flavours of garlic, rosemary, and crunchy walnuts. 10. Enjoy. 👌 #Easterlunch #EasterFoodIdeas

Mashed Potato Cups The perfect side dish for Easter served with your favorite protein and a delicious crunchy green salad. Here’s everything you need: 550 grams cold mashed potato 2 tablespoons sour cream 1 egg (whisked) 25 grams melted butter 150 grams cheddar cheese (shredded) 1 tablespoon chives (chopped) Sea salt Pepper Muffin tin PREP TIME: 40 minutes Makes 7 Instructions: 1. Turn on the oven to 175°C (350°F). 2. Mix all the ingredients in a bowl (save 50 grams of shredded cheddar). Add sea salt and pepper. 3. Brush the muffin tin cavities with melted butter. 4. Spoon the mashed potato mixture into the muffin tin (or use an ice cream scoop). 5. Brush the top of the potato cups with melted butter. Sprinkle with sea salt. 6. Add the remaining shredded cheese on top.  7. Bake for 30 minutes until golden and bubbly. 8. Allow the muffins to cool a bit in the pan. 9. Loosen the edges with a sharp knife, and then lift the cups out carefully wiith a fork. 10. Serve. Hope you like them.
