Sweet, caramelised onions, the ultimate burger sauce, and Mingle’s BBQ seasoning come together for something so much better than a Big Mac! Macros (Serves 4) • 570kcal • 49.3g P • 40.6g C • 22.1g F Ingredients • 8 corn taco tortillas • 500g LEAN minced beef (95%) • 1 pack @mingleseasoning American BBQ seasoning • 8 slices burger cheese • 2 cups lettuce shredded • 3 onions very finely sliced • 2 tsp maple syrup • ¼ cup fresh parsley finely chopped Sauce • ½ cup Greek yoghurt • ¼ cup reduced sugar ketchup • 1 tsp garlic powder • 1 tbsp American mustard • 2 tsp coconut sugar • 2.5 tbsp dill pickle finely diced + 1 tsp pickle juice Note: Please use lean minced beef and very little oil to avoid greasy tacos. Method 1. Caramelise the onions: Heat a drizzle of olive oil in a large frying pan over medium heat. Add the sliced onions, maple syrup and a pinch of salt. Cook for 25 minutes, stirring regularly, until the onions are deeply golden and soft. Add small splashes of water if the pan becomes dry. Set aside. 2. Make the burger sauce: In a small bowl, combine the Greek yoghurt, ketchup, mustard, garlic powder, coconut sugar and diced pickles. Mix well and set aside. 3. Prepare the smash tacos: Divide the mince into 8 equal balls. Place one ball onto each tortilla and press firmly with your hands to spread the meat in a thin layer right to the edges of the tortilla. Sprinkle generously with the BBQ seasoning. 4. Cook the tacos: Heat a large frying pan or griddle over medium-high heat. Place the tacos meat-side down and cook for 2–3 minutes, pressing lightly so the meat browns and crisps. Flip the tacos so the tortilla side is down. Place a slice of cheese on the meat, cover the pan and cook for 1-2 minutes, until the cheese melts and the tortilla is lightly toasted. Repeat with remaining tacos. 5. Assemble: Top each taco with shredded lettuce, caramelised onions, burger sauce and a sprinkle of fresh parsley. Serve immediately.

Chicken taco tortilla cups 6 tortillas 1 tbsp plain flour 3 tbsp water Filling: 500g chicken mince 1 sachet Mingle taco seasoning 1 tbsp tomato paste 100ml chicken stock 1 red capsicum, thinly sliced Topping: 1/2 cup mozzarella 1 tbsp coriander, chopped 1. Preheat oven to 180C. 2. Mix flour and water until smooth. 3. Make 4 cuts around each tortilla. Brush lightly with the flour mixture, then fold and press into cup shapes to secure the edges. 4. Place into a greased baking dish. 5. Heat a large pan over high heat. Cook chicken mince until browned. 6. Add taco seasoning and tomato paste, stir well. 7. Pour in chicken stock and add capsicum. Cook until thick and the liquid has absorbed. 8. Spoon mixture into tortilla cups. 9. Top with mozzarella. 10. Bake for 10-15 minutes until cheese is melted and tortilla edges are crisp. 11. Recipe below 👇🏼 🍅🌿 Pan-Blistered Tomato Basil Rigatoni 🛒You’ll Need: • 4-5 Roma tomatoes, halved lengthwise • 8 oz mezzi rigatoni • 2 tbsp olive oil • 2 garlic cloves, minced • 1/4 cup fresh basil, torn • Salt, pepper, garlic powder, red pepper flakes & Italian seasoning (to taste) • 1/4 cup grated parmesan 🤌🏼How to Make 1. Bring a pot of well-salted water to a boil and cook your pasta until al dente. 2. Heat olive oil in a large skillet over medium-high heat. 3. Place tomatoes cut side down and let them cook 4–5 minutes without moving until blistered and soft. 4. Remove skins, the mash the tomatoes directly in the pan to create your sauce. 5. Add garlic and seasonings. Cook 2-3 minutes until fragrant. Stir in the basil. 6. Add pasta and sprinkle in parmesan until the sauce turns glossy and coats the pasta. They cook faster than a whole loaf and are perfect for meal prep. 📝 Ingredients: ✦ 1 lb Ground Chicken ✦ 1/2 cup Panko Breadcrumbs ✦ 1/2 cup Grated Parmesan Cheese (plus 2 tbsp for topping) ✦ 1 large Egg ✦ 2 tbsp Milk (or Greek Yogurt for moisture) ✦ 1 small Onion, finely grated (or 1 tsp onion powder) ✦ 4 cloves Garlic, minced (divided: 3 for loaf, 1 for topping) ✦ 1 tbsp Fresh Parsley, chopped ✦ 1 tsp Dried Oregano ✦ 2 tbsp Unsalted Butter, melted ✦ Salt and Pepper to taste 👩‍🍳 Instructions: 1- Preheat your oven to 400°F (200°C). Because for me, I like minimal or no chopping, one pan, no more than 5 minutes of prep work, and one dish to clean 👏🏼👏🏼👏🏼 dumb dinner episode 19: french onion crunch chicken Ingredients 2 lbs boneless, skinless chicken thighs (leave whole) 1 container of premade french onion dip ½ tsp dried thyme ½ tsp kosher salt ½ tsp black pepper 1½–2 cups shredded gruyère (mine had Swiss cheese in it too) 1 cup fresh green beans (trim with scissors) 1 cup potato chips, crushed 1 cup french fried onions instructions preheat oven to 375°. lightly grease a 9x13 baking dish. pat chicken thighs dry with paper towels. lay chicken in a single layer in the dish. sprinkle thyme, salt, and pepper directly over the chicken. spread the french onion dip over the chicken like frosting. scatter green beans around and between the chicken. top everything with shredded gruyère. bake uncovered for 35–45 minutes, until chicken reaches 165° internally. remove from oven and sprinkle crushed potato chips + french fried onions over the top. return to oven for 8–10 minutes, until golden and crispy. let rest 10–15 minutes before serving so it thickens. #familydinner #dinneridea #easydinners #easydinner #easyrecipes

QUICK. 😋✨ a quick lunch for us, but adding some grilled chicken…🤌🏼💋 (Serves 2) 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: • 8 oz fettuccine or spaghetti (about ½ standard box) • 2 Tbsp butter • 3 garlic cloves, minced (about 1 Tbsp) • 1½ cups chicken broth • 1 cup milk • 1 cup finely grated Parmesan cheese • ½ tsp salt (adjust to taste) • ¼ tsp black pepper • Fresh italian parsley, chopped ⸻ 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬: 1. Using a wide pan over medium heat, melt the butter. Add garlic and cook 30 seconds until fragrant. 2. Pour in chicken broth and milk. Season lightly with salt and pepper.
