Healthier Tater Tot Casserole… AKA: Sweet Potato Casserole 🍠 Ingredients • 2 lbs ground beef • Salt, to taste • Black pepper, to taste • 1–2 tsp onion powder • 1–2 tsp garlic powder • 1 tsp paprika • 1 bag frozen mixed vegetables • 1 (10.5 oz) can cream of mushroom soup • 3–4 cups diced sweet potatoes (about 2 medium-large) • 1–2 tbsp olive oil • 1½–2 cups shredded sharp cheddar cheese Instructions 1. Preheat oven to 400°F. 2. Peel (optional) and dice sweet potatoes into ½-inch cubes. Toss with olive oil, salt, pepper, and a light sprinkle of paprika. Spread on a baking sheet and roast for 15–20 minutes. 3. In a large skillet over medium heat, cook ground beef until browned. Drain excess grease if needed. Season with salt, pepper, onion powder, garlic powder, and paprika. 4. Stir in frozen mixed vegetables and cream of mushroom soup. Mix until combined and heated through. 5. Spread beef mixture evenly into a 9x13 baking dish. Layer roasted sweet potatoes evenly on top. 6. Bake at 400°F for 20 minutes, until sweet potatoes are tender. 7. Sprinkle shredded sharp cheddar over the top and bake an additional 5–7 minutes, until cheese is melted and bubbly. Let rest 5 minutes before serving.

Mix it up with your favorite toppings and enjoy. #TheBakerMama #quesadilla #sheetpandinner Sheet Pan Beef and Bean Quesadilla   Ingredients: 13 (8-inch) taco-size flour tortillas  1 pound ground beef 1 (16 ounce) can refried beans 1 (1 ounce) package taco seasoning  3 cups shredded Mexican style cheese Softened butter, for greasing the pans    For Serving: guacamole  sour cream  pico de gallo cilantro   Instructions:  1. Preheat oven to 425°F. 2. Coat the inside of a 18x12 rimmed sheet pan with butter, making sure to cover completely.  3. Lay 10 tortillas on the sheet pan, starting with the corners and overlapping a bit to cover the entire pan, leaving about two inches hanging over the edge of the pan. 4. Brown ground beef and then stir in the taco seasoning and refried beans. Stir to combine well. 5. Spread ground beef mixture over tortillas in the sheet pan. 6. Sprinkle evenly with the shredded cheese. 7. Lay three tortillas down the middle of the pan. Fold edges of the tortilla left hanging over the pan to cover completely. Use a toothpick to hold the edges in place, if needed.  8. Butter the bottom side of a second rimmed sheet pan. Remove the toothpicks and place on top of the tortillas, buttered side down, pressing it down just a bit. 9. Bake for 30 minutes. Remove top sheet pan and let bake for another 5 minutes or until golden brown all over the top. 10. To serve, cut into squares and serve with your favorite quesadilla toppings.

cheesy fiesta potato bowls 👩🏼‍🍳✨🤤 For the seasoned potatoes 1½ lb Yukon gold or russet potatoes, diced ½-inch 2 tbsp olive oil 1 tsp chili powder 1 tsp paprika ½ tsp garlic powder ½ tsp onion powder ¾ tsp salt ¼ tsp black pepper For the beef 1 lb ground beef 1 tsp chili powder 1 tsp cumin ½ tsp paprika ½ tsp salt ¼ tsp pepper 1/3 cup salsa Toppings: choice of nacho cheese sauce Sour cream Diced tomatoes or pico de gallo Shredded lettuce (optional) Pickled Jalapeños Green onions Hot sauce (optional) Instructions: 1. Preheat the oven to 425 degrees. 2. Add the diced potatoes to a large bowl along with the olive oil and potato seasonings. Toss well until the potatoes are evenly coated, then spread them in an even layer on a parchment-lined baking sheet. 3. Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden and crispy 4. While the potatoes are roasting, preheat a large skillet over medium heat. Once hot, add the ground beef and cook for 7-10 minutes, breaking the meat apart as it cooks, until fully browned and cooked through. 5. Once the beef is cooked, stir in the seasoning and salsa. Let it simmer for 2–3 minutes until saucy and the flavors come together. Taste and add additional salt if needed. 6. Now it’s time to assemble. To each bowl, add some romaine lettuce (optional), a layer of crispy potatoes, the taco meat, and a generous drizzle of nacho cheese and sour cream. Dumb Dinners, Episode 26: Coconut Curry Chicken Bake What you need: 1 can (15 oz) full-fat unsweetened coconut milk 1¾ cups low sodium chicken broth 3 tablespoons red curry paste 4 tablespoons reduced-sodium soy sauce 2 tablespoons creamy peanut butter 2 teaspoons sesame oil 2 teaspoons minced garlic 1 teaspoon minced ginger 1½ lbs boneless skinless chicken thighs, cut into 1½-inch pieces 1½ cups long grain white rice, uncooked 1 cup frozen shelled edamame 4 green onions, sliced, divided 1 lime Chili crisp for serving How to make it: Preheat oven to 375°F and spray a 9x13 baking dish with cooking spray Microwave peanut butter for 10 seconds to soften Pour coconut milk and chicken broth into the dish, add curry paste, soy sauce, peanut butter, sesame oil, garlic, and ginger and whisk until completely smooth Add rice and gently flatten into an even layer Lay chicken on top and press lightly into the sauce Scatter edamame and most of the green onions over everything Cover tightly with foil, pressing edges firmly against all four sides Bake 45-50 minutes until rice has absorbed the liquid and is cooked through Remove foil for the final 5 minutes Squeeze lime over the whole dish, top with reserved green onions and chili crisp, serve straight from the pan #easydinner #easydinners #easydinneridea #dumbdinners #easydinnerrecipes

You’ll need: * 1 cup cherry tomatoes, diced * Handful fresh basil, sliced * 2–3 garlic cloves, finely diced * 1 tablespoon olive oil * Salt and pepper, to taste * 1 lb chicken breasts * Burrata cheese, for topping Yogurt coating: * 1 cup Greek yogurt * 1 tablespoon milk * Pepper, to taste Breading: * 1 cup panko breadcrumbs * 1 cup grated Parmesan cheese * ½ teaspoon garlic powder * ½ teaspoon onion powder * Salt, pepper, Italian seasoning, to taste * Olive oil spray Instructions: 1. Prepare the Bruschetta: In a bowl, combine diced cherry tomatoes, sliced basil, and finely diced garlic. Add 1 tablespoon olive oil, salt, and pepper. Try it out and let me know what you guys think ⤵️🌿🍗 #chickenrecipe #italianchef #easydinneridea #cookwithme Ingredients- Chicken: Bone-in, skin-on chicken pieces Salt Oyster sauce Roasted Potatoes: Potatoes, peeled and cut into chunks Neutral oil & salt Garlic cloves (optional) Green Sauce: 1 stick (113 g) unsalted butter 2 shallots, sliced 1 egg yolk Handful parsley Handful mint Handful tarragon Handful basil 30 g anchovies (3 or 4) 15 g capers (nice spoonful) Lemon juice, to taste Worcestershire sauce, to taste Black pepper 1 Tbsp Dijon mustard Grated fresh nutmeg (just a bit) 1. Chicken Pat the chicken dry thoroughly and season generously with salt. Render the skin: Place the chicken skin-side down in a cold pan. Turn the heat to medium and slowly render the fat until the skin is deeply golden and crisp. Glaze: Before transferring to the oven, brush both sides with oyster sauce — this is the key 🔑 Finish: Transfer the pan (or move the chicken to a tray) and finish cooking in a hot oven until done (internal temp 165°F / 74°C) I say around 40-45 min 2. Roasted Potatoes Place peeled, cut potatoes in a pot of cold water. Bring to a boil and cook until fork-tender. Rough the edges: Drain, then shake the pot to create rough, fluffy edges for better crisping. Heat neutral oil on a baking tray in the oven until very hot. Roast: Add the potatoes to the hot tray, then carefully pour some of the hot oil over them. Optional: Add whole garlic cloves if roasted garlic is desired. Bake: Roast until deeply crisp and golden, turning occasionally (around 30-45 min depending on your oven) 3. Herb Sauce Melt the butter in a pan and cook the sliced shallots until soft and translucent (no color) Blend: Transfer the butter-shallot mixture to a blender. Add: Parsley, Mint, Tarragon, Basil, Egg yolk, Anchovies, Capers, Lemon juice, Worcestershire sauce, Pepper, Dijon, Nutmeg Purée until smooth. Taste and adjust seasoning or acidity as needed. Pour the sauce into a pan and gently warm. Add a splash of water to loosen the consistency. Plate up & enjoy 🔥🤩
