Ingredients: 1 cup Blueberry 1 inch Ginger 3 Cardamom/ Cinnamon (optional) 2tbsp Brown sugar 1.25lt Water Method: 🍂Day 1- Mix all of the above in a jar and keep aside for 4 days for 1st fermentation. 🍂Day 2-Mix well and keep it back 🍂Day 3-Mix well and keep it back 🍂Day 4-Strain & keep for second fermentation in a flip top bottle for 2 days & refrigerate. First Fermentation: 🍃The Sugar is eaten up by yeast naturally present in the berries.Hence creating carbonation. Second Fermentation: 🍃Second fermentation depends on how fizzy you want the drink. Sorry to burst your bubbles… but most store-bought gut sodas aren’t actually fermented. That’s why I started making my own! This fun alternative is alive, fizzy, way cheaper, and honestly feels like a fun little science experiment you get to drink. Ginger Bug Recipe (the starter): • 1 cup water • 1 tbsp chopped or ground ginger • 1 tbsp sugar Mix, cover with something breathable, and let it sit somewhere warm. Feed it 1 tbsp ginger + 1 tbsp sugar daily for 2 more days until it’s very bubbly. Second ferment: Add your ginger bug to an airtight bottle + juice of choice (anything with sugar works). Let it sit ~24 hours, then refrigerate. & That’s it! (Caution cause it could pop off faster than expected) Living, naturally carbonated probiotic soda. Save this for later and tell me what flavors I should try making!

When I can't garden I ferment, so expect more bubbly sodas! I had to juice a pineapple for my daily green juice, so I used the skins to make a tepache! Skins from 1 pineapple, scrubbed very well Quart size mason jar 1/8 cup raw cane sugar / piloncillo Optional: cinnamon stick, clove, star anise Add skins to a quart sized jar Add sugar and spices Cover with water (skins fully submerged) Cover loosely so air can escape, I used pickle jar lids Ferment 24–72 hours at room temp Fermentation times vary greatly I let mine ferment for about 48 hours before I switched over to my swing top bottles to trap carbonation. You know fermentation is active when you have a steady steam of bubbles from bottom to top, this is when I know its ready to drink or trap the carbonation to then drink. You can drink as is or transfer to bottles to trap the carbonation so you get a really bubbly soda. For it to taste sweeter and more like pineapple, also add pieces of the pineapple to your solution. I did this once and it was amazing, this time I wanted to see what just the skins tasted like. It was good, very unique tang to this one. Now I want to try an authentic tepache! #fermentation #fermented #fermentedsoda #tepache #gutfriendly
