Before you scroll, this is not hair (I promise)! This fuzzy topping is actually pork floss, made from stewed meat with a melt-in-your-mouth texture that I absolutely love. One of my favorite ways to enjoy it is in a Chinese bakery classic, pork floss buns! Ingredients Yudane / Tangzhong • 26g bread flour • 79g milk Dough • 290g bread flour • 4g instant yeast • 25g sugar • 6g salt • 19g butter • 211g milk Toppings • 40g mayo • 20g sweetened condensed milk • 1–2 cups shredded pork floss Instructions 1. Make the yudane/tangzhong by heating 26g bread flour and milk in a pot until thick. Let cool. 2. In a mixer with a hook attachment, combine flour, yeast, sugar, salt, and milk. Mix on medium for 4 minutes. 3. Add the yudane/tangzhong and mix for another 2 minutes. 4. Add butter and mix for another 8 minutes until smooth and elastic. 5. Let dough rise in a warm place for 45 minutes. 6. Mix mayo and sweetened condensed milk in a small bowl. 7. Divide dough into 10 equal pieces. 8. Roll each piece into an oblong shape. 9. Spread a thin layer of the mayo mixture in the center and sprinkle about 1 tbsp pork floss on top. 10. Pinch the sides together and shape into an oblong. 11. Place buns seam-side down on a baking sheet. 12. Let rest for 45 minutes or until doubled in size. 13. Brush with egg wash and bake at 350°F for 15 minutes. 14. Once cooled, spread more of the mayo mixture on top of each bun. 15. Press buns into pork floss until fully coated on top. 16. Bake at 180℃ for about 13 minutes. Turn off oven, and simmer for 2 minutes or till the buns are golden brown. [Dough Ingredients] 437g /10=43g 170g bread flour 25g spelt flour 23g raw sugar 2g instant dry yeast 26g corn yudane dough^ 40g sourdough starter, 100% hydration 10g coffee solution * 95g soya milk, low sugar, cold 5g whipping cream 20g cold water, to be added depending on dough condition 3g low sodium salt 17g unsalted butter [Luncheon Meat Filling] 340g/10= 30g Trim away the top and bottom, and cut into 10 sticks. [Toppings] - Brush the sides of the buns with mixture of rice bran oil + honey + beaten egg + potato starch + bread flour Brush over buns before baking [Coffee Cookie Crust] 10g salted butter + 8g icing sugar + 9g beaten egg + coffee syrup# + 3g potato starch + 10g top flour ^ 26g yudane is made by mixing 6g bread flour with 5g corn flour before adding 16g hot water, and mix into a sticky paste. These Brioche Buns are my current baking obsession. Soft, buttery and ridiculously fluffy. If you’ve ever wondered why some breads are unbelievably soft, it’s usually because of tangzhong. It’s a Japanese technique where a small portion of flour is cooked with liquid to form a paste before mixing into the dough. It helps the buns hold more moisture, making them lighter, softer and stay fresh longer. Basically… bakery level buns from your home oven. Tried it in these brioche buns and the texture speaks for itself. Here’s the full recipe: Tangzhong • 20 g bread flour • 40 ml milk • 40 ml water You cook it till it looks like a thick custard or mashed potatoes, then cool it. Main Dough • 320 g bread flour • 40 g sugar • 8 g instant yeast • 5 g salt • 1 egg • 10 g honey(optional) • 100 ml milk • 50 g softened unsalted butter Knead dough (add butter later), proof till doubled, divide into 6, proof again, egg wash and bake at 180°C for about 20 mins or until golden brown. I got this ‘roti boy’s recipe from @themeatmenchannel . I tried this in both Malaysia and Singapore. It is a soft sweet bun with butter inside and a coffee cookie crust on top. The bun came out really really soft. the bun recipe can work for a soft sweet loaf as well. Though the bun tasted really good, my dough was a bit too soft. At first I was skeptical about it then I read as long as the dough is not watery, the bun will still come out soft and delicious but not in the best shape 🙂‍↕️ No one is judging right? #bun #rotiboy #singaporebun #malaysianfood #food

Korean Salt Bread Crispy and buttery exterior, soft cloudy insides ❤️ Sharing the recipe again 🫰 530g bread flour 30g sugar 8g yeast 10g salt 400g cold milk 12 cubes of cold frozen butter Knead all ingredients except butter for 15 mins on stand mixer using dough hook. Cover and leave to prove for 1 hour in the bowl. Punch down and weigh 12 balls 80g each Roll out each ball into a long teardrop shape (like shaping a croissant). Place a cube of butter at the top of the rolled dough and roll it tightly downwards creating a croissant shape. Arrange on baking tray, cover and let prove for 30 mins. Preheat oven at 180ºC. Once buns are jiggly and puffed, spray with water and sprinkle with salt. Bake for 30-40 mins depending on yr oven. Rotate tray in oven if necessary. Once golden brown, remove from oven and brush melted butter on the surface of the buns. Enjoy! ❤️
