Gluten-free flour blends are made from starches like potato starch, rice flour, and tapioca starch. When hydrated and fried, these starches create an ultra-light, shatteringly crisp coating that stays crunchy longer than traditional flour batters. Ingredients * Cod or your preferred white fish, cut into portions * Oil, for frying Crispy Batter (halve if needed) * 500 g gluten-free flour blend * 1,000 g ice-cold water * 1 Tbsp garlic powder * 1 Tbsp onion powder * 2 Tbsp chicken bouillon powder * 1 Tbsp black pepper * 1 tsp kosher salt * 2 tsp turmeric * 1 tsp paprika Cilantro Tartar Sauce * 1 bottle prepared tartar sauce * Fresh cilantro, to taste Instructions 1. Prepare the Batter
In a large bowl, whisk together all dry batter ingredients. Add about ⅔ of the cold water and mix until a thick paste forms. Slowly add the remaining water, whisking until the batter is smooth and lump-free. 2. Prep the Fish
Pat the fish dry thoroughly. Lightly coat each piece in flour, shaking off any excess. 3. Fry
Heat oil to 350°F (175°C). Dip the floured fish into the batter, allowing excess to drip off, then carefully lower into the hot oil. Fry for 5–6 minutes, or until deeply golden and crisp. Drain on a rack. 4. Make the Sauce
Blend tartar sauce with fresh cilantro until smooth. 5. Serve

Crispy Fish Fingers🫶🏻🤍 INGREDIENTS: • Boneless fish fillet (basa / tilapia) – 350g • Salt – to taste • Black pepper – ½ tsp • Paprika – 1 tsp • Garlic powder – 1 tsp • Onion powder – 1 tsp • All-purpose flour (maida) – 2½ tbsp • Egg – 1 • Water – 2–3 tbsp • Panko breadcrumbs – 1 cup • Oil – for frying METHOD: • Cut the fish into thick finger-shaped strips. • In a bowl add fish, salt, black pepper, paprika, garlic powder, onion powder and flour. • Add egg and water, then mix well until the fish is coated in a thick slurry-like batter. • Coat each piece well in panko breadcrumbs, pressing gently so the crumbs stick. • Let the coated fish rest for 5–10 minutes. Before boxed cereal and drive-thrus, this is what our people were cooking from the 1800s into the early 1900s: 1. Hoe cakes, cornmeal cakes fried in cast iron, eaten with molasses or sorghum 2. Ashcake, cornmeal dough wrapped and baked in fireplace ashes 3. Grits with red-eye gravy made from ham drippings and coffee 4. Rice and milk, leftover rice warmed with milk, sugar, and nutmeg 5. Fatback and scratch biscuits 6. Chitlins and eggs, especially in winter months 7. Liver and onions with grits 8. Fried fish and cornbread, common in river and coastal towns 9. Grillades and grits in Louisiana Creole communities 10. Coffee poured over stale bread with sugar during hard times 11. Sorghum soaked biscuits when jam wasn’t available 12. Hominy made by hand using lye 13. Cold sweet potatoes eaten with buttermilk Most of these meals were built around corn, pork, rice, molasses, and whatever could be grown, hunted, or caught. This wasn’t just food. It was resourcefulness. It was knowing how to make something out of almost nothing. That’s the kind of #knowledge that built families and kept people alive. Mangalorean Fish Fry ❌❌No Repost❌❌ - Fish 3-4 slices ( i used seer fish) - Turmeric powder For Masala paste - Dried Byadgi chilli or Dried Kashmiri chilli - Garlic cloves 4-5 - Ginger small piece - Cumin 1/2 Tsp - Few Fenugreek seeds - Coriander seeds or powder 1 Tsp - Tamarind small piece soaked in water - Onion 1 small - Salt - Pepper cones 1 Tsp - Curry leaves - Water( i have added water and salt missed capturing it) For Frying - Oil - Curry leaves 1. Coat cleaned fish with turmeric powder and set aside. 2. Soak dried red chillies in hot water for 30 minutes. 3. Dry roast fenugreek seeds, cumin seeds and coriander seeds 4. Blend soaked chillies with other ingredients to form a thick, smooth paste. 5. Apply this masala to the fish and let it marinate for an hour. 6. Heat oil in a pan and fry the fish on both sides until cooked, avoiding over frying . 7. Add curry leaves and the remaining masala to the pan, sauté for 1-2 minutes. 8. Coat the fried fish with the masala, cook for an additional 2 minutes, and turn off the flame. 9. Crispy fish and chips ingredients: ●1 kg Fish (seasoned with salt & pepper) ●1 cup corn flour for coating Wet batter ●200 g all-purpose Flour ●½ cup corn flour ●1 tsp Garlic powder ●1 tsp Onion powder ●1 tsp Paprika ●1 tsp Salt ●1.5 tsp Baking powder ●400 ml Club soda ●1 tsp Cayenne pepper or as per taste ●1 tsp Hot sauce or as per taste Tartar/Dipping Sauce ​Mix the following ingredients together: ●​1/4 cup Mayo ●​2 tbsp mustard paste ​●1 tsp peprika ●2 tsp hot sauce s or as per taste Instructions: ​1. Prep the Fish ​Dry it well: Use paper towels to pat the 1 kg of fish completely dry. Moisture is the enemy of a crispy crust! ​Season: Sprinkle both sides of the fish with salt and pepper. ​2. The Dry Coat (Dredge) ​In a shallow bowl, place the 1 cup of flour ​Dredge each piece of fish in the corn flour until lightly coated, then shake off any excess. This acts like "glue" for the batter. ​3. Mix the Batter ​In a large mixing bowl, whisk together the 200g flour, garlic powder, onion powder, paprika, 1 tsp salt, and 1.5 tsp baking powder. ​Add the hot sauce/cayenne if you’re using it. ​The Golden Rule: Just before you are ready to fry, pour in the 400 ml of ice-cold club soda. Whisk gently until just combined. Don't overmix! A few tiny lumps are fine; over-whisking pops the bubbles and makes the batter tough. 4. The Fry ​Heat your oil to 375°F in a deep pot or fryer. ​Dip a floured fish fillet into the batter, let the excess drip off for a second, and carefully lower it into the oil. ​Pro Tip: Hold the fish halfway in the oil for 5 seconds before letting go—this "sets" the batter so it doesn't stick to the bottom. ​Fry for 3–6 minutes, turning once, until the batter is deep golden brown and the fish flakes easily. ​5.
