Ghormeh Sabzi – Persian Herb Stew 🇮🇷💚 A slow-simmered hug from Persian cuisine. It’s deep, herby, tangy, and unfashionably good with rice. 🪴 Sabzi (Herb Mix) • 4 bunches Curley parsley (long stems removed) • 1 bunch spinach • 1 bunch cilantro (long stems removed) • 1 bunch green onions • 1-2 tbsp dried fenugreek (if you can find, it has a bitter flavour) • ½ cup oil (for frying) 🧅 Onions & Meat • 1 large onion, finely diced • 1 lb beef (ribeye, sirloin, or striploin), cubed • 1 tbsp salt • ½ tbsp pepper • 1 tbsp turmeric • 1 can red kidney beans, drained 🥣 Broth & Lime Juice • 3 cups beef broth (chicken works too) • 1–3 limes (juice, to taste) • 4 dried limes (poke a few holes in them before cooking) 🔥 Steps Fry the herbs: Finely chop all your greens. Fry them in ½ cup oil on medium heat, stirring often, until the moisture cooks off and they turn a deep dark green with a golden hue. Set aside. Build the base: In a pot, fry onions until golden. Add beef, salt, pepper, and turmeric. Brown the meat on all sides. Combine: Add the fried herbs and kidney beans to the pot. Simmer: Add broth, lime juice, and the dried limes (with holes). Bring to a gentle boil, then reduce heat and simmer for 1.5–2 hours, until the meat is tender and the stew is rich and aromatic. قرمه سبزی (Ghormeh Sabzi) با سبزی سرخ شده ی خشکِ خاله قرمه سبزی فروش @khale.sabzi.forosh @khale.sabzi.forosh میدونین به سبزی نیشابور میگن طلای سبز؟ و به قورمه سبزیی که با سبزی نیشابور درست بشه میگن قورمه طلا 😋 تنها کافیه به ازای هر نفر یک قاشق از این سبزی سرخ شده خشک شده رو استفاد کنید 🥰 @khale.sabzi.forosh @khale.sabzi.forosh اصلا از سبزی فریزری استفاده نکنین چون سبزی فریزری بخاطر روغنی که داره خیلی مضر هست و سبزی داخل فریزر دچار یخ زدگی میشه و خاصیتش رو از دست میده ،بجاش از سبزی سرخ شده ی خشک استفاده کنید که عطر و طعم بهتری داره و لعاب فوق العاده ای میده به خورشتتون🌱 🟢 برای عزیزانی که قصد مهاجرت دارند یا دانشجو و کارمند هستند بهترین انتخاب استفاده از این سبزی سرخ شده خشک شده هست. مقدار یک کیلو از این سبزی برای اینکه یک خانواده ۴ نفره به مدت یک سال هر هفته قرمه سبزی میل کنند کافیه 🥰 ( حدود ۵۰ تا ۵۵ وعده ) تنها و مطمئن ترین کسی که می تونین با خیالت راحت این قورمه طلا رو ازشون خریداری کنید، خاله سبزی فروش هست @khale.sabzi.forosh @khale.sabzi.forosh مواد لازم : ۵۰۰ گرم گوشت گوسفندی به ازای هر نفر یک قاشق غذاخوری لوبیا قرمز یا چیتی سبزی سرخ شده خشک شده به ازای هر نفر یک قاشق غذاخوری(ما برای ۸ نفر ۸ قاشق استفاده کردیم) پیاز دو عدد متوسط ادویه : نمک و فلفل و زردچوبه و ۴ عدد لیمو عمانی ، به دلخواه یک قاشق سرخالی رب نارنج (شما میتوانید ادویه قرمه سبزی و شنبلیله خشک را هم در ده دقیقه آخر پخت هم به قرمه سبزی اضافه کنید) ترکیبات این سبزی سرخ شده خشک چون حاوی سبزیجات معطر هم هست دیگه نیاز به این‌ مواد نبود . ‏Necessary materials: ‏500 grams of mutton ‏One tablespoon of red beans or chiti per person ‏One tablespoon of dried fried vegetables per person ‏Two medium onions ‏Spices: salt, pepper, turmeric, 4 Omani lemons, a spoonful of orange paste as desired ‏(You can add the spice of vegetable curd and dried fenugreek to the curd of vegetables in the last ten minutes of cooking) The ingredients of this dry fried vegetable, because it also contains aromatic vegetables, there was no need for these ingredients.

There’s something about making ghormeh sabzi that feels like an act of preservation, of memory, of connection, of the Iran that lives in our kitchens and our hearts. This dish doesn’t ask for your political allegiance. It asks only that you honour the hands that first showed you how to pick fenugreek leaves, the voice that taught you the patience of slow-simmered love, the table where you learned that food is how we say “you belong here.” I make ghormeh sabzi for the people of Iran, the ones who taught me that herbs are medicine, that hospitality is sacred, that even in the hardest times, we still gather, we still cook, we still feed each other. My support is for the mothers and grandmothers keeping traditions alive in their kitchens. For the young people navigating impossible choices. For everyone caught between what was and what might be. For the humanity that no political movement can claim ownership over. This pot holds no agenda except this: to remember that before we are anything else, we are people who deserve dignity, safety, and the freedom to define our own future whatever that looks like. Zutaten (ca. 4-5 Personen): • Ca. 500 g Lammfleisch • 1 große Zwiebel • 1,5 EL getrockneter Bockshornklee • 3 Bund Lauchzwiebel, 3,5 Bund Petersilie, 150g frischer Spinat, 2 Bund Koriander • 3 getrocknete Limetten • 250 g gekochte Kidneybohnen • Eine Prise Kurkuma (ca. 0,25 TL) • 2 geriebene Knoblauchzehen • Heißes Wasser oder Rinderbrühe • Öl • Salz & Pfeffer nach Geschmack Zubereitung: 1. Lammfleisch in Würfel schneiden. 2. Alle Kräuter ganz fein hacken – sehr sehr fein! 3. Zwiebeln in Öl anbraten bis glasig. Fleisch dazugeben, mit einer Prise Kurkuma, Salz, Pfeffer, 2 Zehen geriebenen Knoblauch dazugeben und mischen. Für 5 Min scharf anbraten. 4. Mit Wasser oder Rinderbrühe auffüllen und für ca. 1 h bei mittlerer Hitze köcheln lassen mit Deckel drauf. 5. In einer großen Pfanne die gehackten Kräuter (optional mit 2 EL Öl) unter ständigem Rühren braten. Mittendrin 1,5 EL getrockneten Bockshornklee dazugeben und untermischen. 6. So lange braten die Kräuter tief dunkelgrün /fast schwarz sind und das Wasser komplett verkocht ist. 7. Gebratene Kräuter dem Fleisch hinzufügen, untermischen, Alufolie und Deckel drauf und bei niedriger Hitze ca. 1-1,5 Stunden köcheln lassen. 8. Ca. 250g Kidneybohnen, 3 getrocknete Limetten (gelocht), bei Bedarf einen Schuss Öl hinzugeben, mit Salz und Pfeffer abschmecken und weitere 20-30 Min köcheln lassen bis das Fleisch super zart ist. #ghormehsabzi #persischekueche #ghormehsabzirezept #schmorrgericht #comfortfood #iranischesgericht
