Golden on the outside, soft in the middle, and bursting with Mediterranean flavor! 😍 💡 Why this recipe’s a win: ✅ Gluten-free & keto-friendly ✅ Protein-packed and super filling ✅ Meal-prep friendly—make once, enjoy all week 📊 Macros (per biscuit, makes ~10): Calories: ~150 Protein: ~9g Fat: ~11g Net Carbs: ~3g Ingredients 2 tsp olive oil 1/2 cup onion, diced 2 handfuls baby spinach, rough chop 1 large clove garlic, minced 6 eggs, lightly beaten 1/2 cup sun dried tomatoes, rinsed off + patted dry 1/2 cup cottage cheese 3/4 cup almond flour 1/4 cup coconut flour 1/2 tsp baking powder salt + pepper, to taste 1/2 cup shredded mozzarella 1/4 cup shredded parmesan Instructions Preheat oven to 375℉. Line a large rimmed baking sheet with parchment paper. Heat the olive oil in a large skillet over medium heat. Add in the onion and sauté for 2 minutes. Next, add in the spinach and garlic and sauté until just wilted – 1 minute. Then remove from the burner, transfer to a paper towel lined plate and set aside. In a large bowl, add in the eggs, spinach mixture, sun dried tomatoes, cottage cheese and mix together until incorporated. Next add in the almond flour, coconut flour, baking powder, salt, pepper, mozzarella, parmesan and mix until combined. Then, use a large scooper and transfer about 1/4 cup to the baking sheet. Gently press down and top with a little more mozzarella. Bake for 22-25 minutes or until golden brown on top. Why have I never tried this before?! It’s literally so easy and it tastes 10x better than store bought pasta. Let’s break it down. Ingredients for Pasta: 1 & 2/3 Cup Flour (I used @bobsredmill GF 1:1 flour) 3 Eggs Whisk that together. Form the dough into a ball. Cut the ball of dough in half. Roll out one half (don’t make it too thin). Slice medium length noodles using a knife. DO NOT: fold your dough or cut super long noodles (otherwise they will fall apart). GLUTEN AND DAIRY FREE COCONUT CHICKEN BAKE 🥥

This is the ULTIMATE lazy girl but high effort tasting dinner for my gluten and dairy free peeps. I couldn’t recommend it enough for an easy weeknight dinner (that is also great as meal prep).

Ingredients:
- 4 chicken thighs or breasts
- season in plenty of salt, 1 tbsp of oregano, and 1 tsp of smoked paprika
Sauce ingredients;
- 270mls (or closest equivalent) of coconut cream
- 1 cup of vegetable/chicken stock
- 1 tbsp of tomato paste
- 1/2 an onion
- 3 cloves of garlic
- a thumb sized piece of ginger
- salt to taste
Other ingredients;
- fresh herb of your choosing: I used coriander
- More coconut cream or unflavoured yoghurt

Directions:
- Preheat your pan with avocado oil then brown your seasoned chicken thighs
- Once browned, remove the chicken, and add the onion, garlic, ginger, and veggie stock to deglaze the pan
- Once cooked through (approx 3 minutes) add in the tomato paste, coconut cream, and salt
- Add in 1tsp of oregano and continue to salt the dish to taste
- Once the coconut cream has been simmering in the sauce for a few minutes, add the chicken back in and cook at a medium heat
- Remove once the sauce has thickened (after approximately 5 minutes of cooking on medium heat)
- Serve on a bed of jasmine rice with a fresh sprinkle of coriander (or your herb of choice) and either coconut cream/unflavoured yoghurt

That’s all…I can guarantee it’s suuuper simple & delish!

Perfect for rolling around fillings as a lunchtime wrap, as tortillas for a Mexican feast or as roti for curry night. They are really versatile and easy to make, you need to try these if you've not had them yet! get over how EASY they are! P.s. totally safe for coeliacs, not suitable for wheat allergy sufferers. The flour contains codex wheat starch, which is fully certified and approved as gluten free, it is just an ingredient that understandably confuses people - ask if you have any questions 🙂. Stir well and let sit 3 minutes until a thick, stretchy gel forms. Add flour (start with one cup). Mix with a spoon, then knead 2–4 minutes until a soft, smooth dough forms. If dough feels sticky, dust lightly with more flour. If it feels too tight, wet your hands slightly and knead again. Rest dough 3–5 minutes, then divide into 4–5 balls. Roll each ball thin between parchment paper. Cook on a dry pan over medium heat, about 1–2 minutes per side, until lightly golden. 3 ingredient GF bread rolls. @christianna.nutritionist .⁣ I’ve been wanting to try making these 3 ingredient bread rolls with gluten free flour to see if it works and … it does! So easy to make and so much better than store bought gluten free bread. ⁣ .⁣ INGREDIENTS - makes 8⁣ ▪️2 cups gluten free self raising flour ⁣ ▪️1 1/2 cups fat free Greek yogurt⁣ ▪️1/2 teaspoon salt ⁣ ▪️Optional: 1 beaten egg and 1 teaspoon sesame seeds to top ⁣ METHOD⁣ ▪️Preheat the oven to 180C/350F. Line a baking tray with non stick baking paper. Set aside⁣ ▪️In a large mixing bowl, combine the flour, Greek yogurt and salt. Mix well, until fully combined and you have a ball of dough. ⁣ ▪️Sprinkle a little extra flour on your worktop and put the dough on top. ⁣ ▪️Gently bring it together and using your hands, form it into a rough circle. Cut into 8 pieces.⁣ ▪️Roll each piece into a ball and flatten slightly. ⁣ ▪️Place on the lined tray and if using, lightly brush the tops of each roll with the beaten egg. Sprinkle the sesame seeds on top.⁣ ▪️Bake for for about 25 minutes or until light golden brown. ⁣ ▪️Remove from the oven and allow to cool completely. Enjoy!
