ANBeef ribs on the open fire are a delicious labor of love. I used grass fed and finished ribs from @tangendraw. Here are the steps:
1. Build your fire: I use oak and let my logs burn for 2 hours to create a strong coal bed and then let it burn down until I have steady, glowing embers. You want medium-low heat, absolutely no flames.
2. Prep the ribs: Trim excess fat and membrane. Rub generously with salt and pepper. Let rest at room temp for 30 minutes.
3. Cook slowly: Place ribs on a grate over indirect heat or stand them upright near the coals. Cook for 3–4 hours, turning occasionally and brushing with water with a splash of apple cider vinegar as needed. Keep the fire steady by using a feeder fire of logs moved to the side of the cook area to generate fresh coals.
4. Finish: When the meat is pull-apart tender and the outside has a deep crust, rest for 15 minutes. Slice and serve.
If you want to bump up the smokiness, throw a few rosemary branches or hardwood chips onto the coals during cooking.

If you shop at Costco and buy beef in bulk, make sure you’re getting quality meat or it could cost you more in the long run!
Keep this checklist in mind before you buy beef from Costco:
❌ Hard NO: The lean ground beef in the plastic tube influencers and gym bros love to buy in bulk!
👉 It’s a “product of” FIVE countries: USA, Canada, Mexico, Australia, New Zealand… then processed here.
All those sources means plenty of chances for the meat to be contaminated with GMOs, pesticides, heavy metals, and other environmental toxins…that “good deal” can have a high bill of health down the road so just don’t!
🤔 Maybe: Grass-fed beef from New Zealand.
👉 New Zealand has strict GMO rules, and while it’s not labeled grass-finished, most cattle there are pasture-raised. This is probably clean, but not guaranteed.
✅ YES: The 100% grass-fed patties from Costco.
🥩No antibiotics
🥩No hormones
🥩No grain
🥩Grass-fed meat means a better omega-3s balance, more nutrient dense, and fewer toxins.
Remember - a good deal now doesn’t mean a good deal in the future.
