Lemon Butter Fish Bites with Garlic Aioli (Full Recipe) For the Fish Bites Ingredients: 500g white fish fillets (cod, tilapia, or haddock), cut into bite-size pieces ½ cup all-purpose flour ½ tsp salt ½ tsp black pepper ½ tsp paprika ½ tsp garlic powder 2 tbsp olive oil 2 tbsp butter 2 tbsp fresh lemon juice Zest of ½ lemon 1 tbsp chopped fresh parsley Instructions: Pat fish dry and cut into bite-sized chunks. In a bowl, mix flour, salt, pepper, paprika, and garlic powder. Lightly coat fish pieces in the flour mixture. Heat olive oil in a large skillet over medium-high heat. Cook fish bites 2–3 minutes per side until golden and cooked through. Remove and set aside. In the same pan, melt butter. Add lemon juice and zest, simmer 1 minute. Return fish to the pan and toss gently in the lemon butter sauce. Sprinkle with fresh parsley. Garlic Aioli Ingredients: ½ cup mayonnaise 2 garlic cloves (finely minced or grated) 1 tbsp lemon juice 1 tbsp olive oil Salt to taste Instructions: Mix mayonnaise, garlic, lemon juice, olive oil, and salt until smooth. Lightly grease a baking dish with olive oil. Pat the fish fillets dry and place them in the baking dish. In a small bowl, mix olive oil, garlic, oregano, thyme, paprika, lemon zest, lemon juice, salt, and pepper. Spoon the mixture evenly over the fish. Haddock chimichurri traybake recipe below if you’d like to try it x Ingredients: 2 large Irish Haddock fillets cut into half 3/4 large potatoes, cut into big wedges 1 bunch broccolini 1 bunch green asparagus Olive oil For the potato seasoning: Salt & pepper Paprika Onion salt Chilli flakes For the Chimichurri: Fresh chilli 🌶️, finely chopped fresh parsley, finely chopped Fresh coriander, finely chopped 1/2 clove fresh garlic, minced 1 tbsp apple cider vinegar 1 tsp dried oregano 1/2 tsp red chili flakes (because my chilli wasn’t spicy) 1/2 cup extra virgin olive oil Juice of 1 lemon 🍋 Salt & pepper to taste Method: -Preheat your oven to 200°C -Prepare the potato wedges: Toss the wedges in olive oil and seasoning . Spread them out on a large baking tray with parchment paper and oiled (which I preheated in the oven) and roast for 40 minutes, flipping halfway through, until golden and crispy. -while potatoes are in the oven make the chimichurri: In a bowl, mix together the chopped parsley, coriander, chilli, minced garlic, vinegar, lemon juice, dried oregano, red chili flakes, and olive oil. Season with salt and pepper to taste. -Marinate the fish in half the sauce leaving the rest for drizzling later -After the potatoes have roasted for 40 minutes, remove the tray from the oven. Push the potatoes to one side and add the whitefish fillets to the tray. Arrange the broccolini and asparagus around the fish making sure you mix them into the olive oil from the potatoes -Return the tray to the oven and bake for another 10 minutes, until the fish is cooked through and the veggies are tender. -Serve: Drizzle the remaining chimichurri over the fish and veggies before serving.
