Amanda shares her experience as someone who at gluten free to help her manage her auto-immune condition and found that she could remain symptom free eating sourdough.
How is this possible? Well, we’re not entirely sure…there are are a few potential reasons related to how fermentation alters the nutrient content as well as carbohydrate and protein structures in wheat.
For example, true sourdough is considered a low FODMAP food because fermentation breaks down the fructans in wheat.
And it also alters gluten, making it potentially helpful for those with non-celiac gluten sensitivity (but NOT celiac disease!)
And in this episode, Amanda talks all about how sourdough baking has become a source of joy in her life, helping her to shed perfectionism and of course, a TON of helpful tips to get baking!
