Hidden veggie chocolate muffins your kids will be OBSESSED with!! They are sooo chocolatey and delicious! I found this recipe about a year ago and have made it so many times since! I have swapped out the oil for apple sauce and it’s sooo good. Recipe found from: Kamry blessed on TT • 1 cup shredded carrot • 1 cup zucchini • 1 cup spinach • 1 overripe banana • 2 eggs • 1/3 cup honey • 1/4 cup avocado oil • 1 tsp vanilla • 1/4 cup milk • 11/4 cup flour • 1 tsp baking powder • 1 tsp baking soda •1/3 cup cocoa powder • 1/3 cup chocolate chips Blend all wet ingredients (including veggies and fruit) in the blender. In a bowl combine dry ingredients and then mix in the wet. Scoop into a muffin tin (I used mini) and then bake at 350 F for about 15 minutes #pickyeaterapproved #toddlersnacks #toddlermealideas #hiddenveggies

Toddler approved CHOCOLATE ZUCCHINI MUFFINS 🍫 You can find my full detailed, step-by-step, printable/pinable recipe for this on my website (linked in bio) 👉 or comment ‘MUFFIN’ and I’ll DM it straight to you! INGREDIENTS: Wet - 1 medium zucchini grated and excess moisture squeezed - 1/2 cup maple syrup - 1 large egg - 1/4 cup olive or avocado oil - 1 tsp vanilla extract Dry - 1 1/4 cups plain flour - 1/3 cup cacao powder - 1 tsp baking powder - 1/2 tsp baking soda - 1/2 tsp salt METHOD: 1. Preheat oven to 180°c. Grease or line either a standard 12 muffin tray or 24 mini muffins. 2. Mix together dry ingredients. Mix together wet ingredients in a separate bowl. Fold wet and dry ingredients together until just combined. 3. Fill muffin trays 3/4 of the way full. 4. Bake for 18-22 minutes, a toothpick should come out clean from the centre. 5. Toddler approved meals ✅ Ru is usually a pretty great eater, but we definitely have those days when nothing seems to do the trick so I always keep this Hidden Vegetable Mac and Cheese Sauce stocked in the freezer for backup. Ingredients 8 oz elbow macaroni or small shells 2 cups cauliflower florets ½ cup canned cannellini beans, rinsed and drained 2 tbsp unsalted butter 2 tbsp all-purpose flour 2 cups whole milk, divided 1 ½ cups freshly shredded mild white cheddar ½ cup shredded mozzarella 2 tbsp cream cheese (important for freezer stability) ¼ tsp garlic powder (optional) Salt, to taste Instructions Bring a pot of salted water to a boil. Add cauliflower and cook 8–10 minutes until very soft. Drain and transfer to a blender with the white beans and ½ cup milk. Blend until completely smooth and silky. In a saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute. Slowly whisk in remaining 1½ cups milk. Simmer until slightly thickened. Reduce heat to low and stir in white cheddar, mozzarella, cream cheese, garlic powder, and salt. Stir until smooth. Whisk the cauliflower + bean puree into the cheese sauce. It should stay pale and creamy. How to Freeze: Let cool completely then spoon into silicone muffin trays or small containers. Freeze until solid then transfer to freezer bags. Freeze up to 2 months. You can thaw it in the fridge over night or on the stovetop.
