new hyperfixation meal unlocked 😀 recipe is below tunacado copycat: ••• to a bowl add 1 tin of tuna (drained), 2 TBSP diced red onion, 1 heaped TBSP mayo, 1 TBSP dijon mustard, 1 TBSP chopped dill, the juice of 1/2 lemon, 2 tsp chopped capers, & a dash of salt & pepper ••• mix until thoroughly combined ••• for the pesto, to a blender add: 1 cup fresh basil, 1/2 cup pine nuts, 1 clove of garlic, 1 cup of grated parmesan, 1/2 cup of olive oil, & 1/4 tsp salt ••• slice 1 tomato & 1/2 avocado ••• cut 2 slices of sourdough & then add each slice to a panini press and toast until golden brown ••• once the bread is toasted, spread pesto on both pieces of bread ••• to one piece of bread add half of the tuna mixture, sliced tomatoes (top w a dash of salt & pepper), 1/2 sliced avocado, and then top w the other piece of bread ••• slice in half & enjoy 💞 #instafood #easyrecipes #healthyrecipes

MY NEW HYPERFIXATION MEAL 😩 ingredients (makes 6-8 tacos) * 1 lb ground lamb * 1 tsp cumin * 1 tsp coriander * ¼ tsp aleppo chili or cayenne * 2 tsp salt * 6–8 flour tortillas * olive oil (for cooking) * labneh or greek yogurt (or cottage cheese) * fresh cilantro * chickpeas (roasted with same spices as the lamb or raw) * sumac & lemon marinated onions (recipe below) sumac marinated onions * 1 red onion, thinly sliced * juice of ¼ lemon * 1–2 tbsp sumac * pinch of salt toss everything together in a deli container and let it hang out while you make the tacos. it gets better as it sits and lasts in the fridge for 2 weeks. make the lamb smash tacos 1. in a bowl, mix the ground lamb with cumin, coriander, chili, and salt until evenly combined. 2. place a tortilla on a cutting board. scoop a portion of lamb (about the size of a large golf ball) onto it and gently press it into a thin, even layer, spreading it almost all the way to the edges. 3. repeat with remaining tortillas. i made pretty big lamb balls so that each taco had a lot of lamb, which is why i only made 6. if you use a smaller amount of lamb, you should be able to make 8. freeze stack the tortillas meat-side up with square sheets of parchment paper between each one. slide the stack into a zip-top freezer bag, seal, and freeze flat. they keep beautifully for about a month and cook straight from frozen. to cook 1. pull one taco from the freezer and let it thaw for 5–10 minutes while your pan heats. 2. heat a skillet over medium-high with a little oil. 3. place the taco meat-side down and cook for about 5 minutes, until deeply golden and cooked through. 4. flip and cook the tortilla side for 1–2 minutes, just until warm and slightly crisp. i call them tacos once they’re folded but the inspiration comes from arayes + levantine flavors!!
