📌Kabsa Masala
Grind together:
• ¾ tsp cumin
• ½ tsp fennel
• ½ tsp black pepper
• ¾ tsp coriander seeds
• 4 cardamom pods
• ½ tsp cinnamon powder
• ¾ tsp paprika
• ¾ tsp turmeric
• ¾ tsp red chilli flakes
Set aside.
📌Other Ingredients
• 600 g chicken
• 2½ cups basmati rice (soaked 30 minutes)
• 1 large onion, sliced
• 1 tbsp ginger garlic paste
• ⅓–½ cup homemade tomato sauce
• 1½ tbsp kabsa masala
• 2½ cups hot water
• ⅓–½ cup oil
• 1 bay leaf
• 1 cinnamon stick
• 4–5 black peppercorns
• 2 dried lemons (optional)
• Salt to taste
For the chicken brush masala
• 2 tbsp oil
• 1½ tbsp thick gravy from the pot
• 1 tbsp homemade tomato sauce
• 1 tbsp kabsa masala
• ½ tsp red chilli powder

DEIngredients Required ⬇️
KABSA SPICE MIX:
* 4 cardamom
* 2 tsp pepper
* 3cinnamon stick
* 1 tsp garam masala powder
* 1/2 piece of nutmeg
* 1/2 tsp cumin

* 1 dried whole lime ( grind all the ingredients)
CHICKEN KABSA:
* 4 tbsp olive oil

* 2 green chili
* 2 dried bay leaves
* 6 cloves
* 4 cardamom
* 1 cinnamon stick
* 3 tbsp tomato sauce
* 4 tomatoes chopped)
* 3 chicken stock cubes
* 11/2 kg whole chicken, cut into 6 pieces
* 3 cups basmati rice, soaked and rinsed
* 1/4 cup raisins
* Boiled Water needed
* Salt to taste
* Raisins and almonds for garnish

THAlrighty guys… we’re back with another Ramadan recipe and this week we’re making Kabsa.
My first time making it and I absolutely loved it. Spiced rice, tender chicken, toasted almonds, all the good stuff and a great dish for iftar.
All the ingredients were at my door in under 15 minutes thanks to @talabatuae mart. Convenience that’s hard to beat!
