Crispy, Juicy Middle Eastern Meat-Stuffed Pitas with a Garlic Tahini Sauce 🥙

Ingredients:
-4 small pitas, cut in half
-1 yellow onion, grated & squeezed dry
-7 garlic cloves, minced
-2 tbsp tomato paste
-1/3 cup fresh parsley, chopped
-1/3 cup fresh cilantro, chopped (optional but excellent)
-1 tbsp olive oil
-1 lb (0.45 kg) lean ground beef
-Spices: 1 tsp salt, 1 tsp black pepper, 1 tsp cinnamon, 2 tsp cumin, 2 tsp paprika, 1 tsp allspice
For the Garlic Tahini Sauce:
-1/2 cup Greek yogurt
-3 tbsp tahini
-1/2 lemon, juiced
-2 garlic cloves, minced
-2 tbsp olive oil
-1/4 cup fresh parsley, chopped
-1/4 cup fresh cilantro, chopped
-1 tsp each: cumin, salt, pepper, paprika
Instructions:
1. Preheat your oven to 350°F (175°C). Grate your onion and squeeze every last drop of liquid out using paper towel or cheesecloth.
2. In a large bowl, combine the ground beef, tomato paste, minced garlic, all the spices, parsley, cilantro (if using), and that very dry grated onion. Mix with your hands for about 2 minutes.
3. Cut each pita in half. If they don’t already have a pocket, carefully use a knife to make one. Now, pack them with your beef mixture — and I mean stuff them. You want them full but not bursting (ripped pita = heartbreak).
4. Crisp ’Em Up: Brush the outsides of the stuffed pitas lightly with olive oil. Heat a lightly oiled skillet over medium heat. Place each arayes meat-side down and sear for 1–2 minutes until you get that gorgeous crust. Then sear the pita sides until golden and crisp.
5. Transfer the seared arayes to a baking sheet and finish them in the oven for 10–15 minutes, until fully cooked through.
6. While they bake, whisk together all the garlic tahini sauce ingredients in a bowl. Taste and adjust lemon, salt, or garlic levels to your liking.
7. When the arayes are hot out of the oven, optionally brush them with melted garlic herb butter. Enjoy! 🫡

AVI talk about the gym/working out being my saving grace, because it was. I found it at a time I needed it most, and it instantaneously reignited the athlete inside of me.
As soon as I picked up a 2 lb dumbbell that was laying around my house and realized I didn’t even have the muscle or strength to curl it, it almost reawakened me and brought me out of the brain fog I was trapped in, and I immediately thought, what have I done?
It broke the cycle.
And right then and there is when the challenge began, and I fell in love with the process of what strength training was in a way that I thought wouldn’t be possible since ballet. Now I know there are so many similarities.
Building mental strength and resilience, pushing past barriers, always having something to work on and improve. It’s not just going and getting a workout in….it’s the process. It’s the journey. And I’ve been grinding ever since.

Will this work at any age?
Yes because we are manipulating hyoid bone position with exercise and releasing trapped tissue allowing fluid circulation to happen efficiently
How often do you do this routine?
Do everything but the oil blading every day. Oil blade anytime you are not sore or bruised(bruising only happens when the tissue is unhealthy, after 3-7 treatments the bruising no longer occurs)
To perform dynamic fascia release apply pressure to a spot on the muscle that feels tight or hurts and move that muscle through 20 full ranges of motion movement. Do this to all 3 spots i showed you in the video
For the hyoid exercise do 1 set to failure every day with occasional rest days🩵 unless you have clicking or jaw soreness
