TWClassic Baked Mac and Cheese
Creamy, ultra-cheesy baked mac and cheese with a golden, bubbly top. Comfort food perfection that’s easy to make and always a crowd-pleaser!
Ingredients:
Pasta & Cheese Sauce
1 lb elbow macaroni
4 tbsp butter
¼ cup all-purpose flour
3 cups whole milk
1 cup heavy cream
3 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
½ cup shredded Colby Jack (optional but recommended)
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
For the Topping:
1 cup shredded cheddar cheese
½ cup shredded mozzarella
Instructions
Cook the Pasta
Boil elbow macaroni in salted water until just al dente. Drain and set aside.
Make the Sauce
In a large pot, melt butter over medium heat. Add flour and whisk for 1 minute to create a roux.
Slowly pour in milk and cream, whisking until smooth and thickened.
Add Cheese & Seasonings
Remove from heat and stir in cheddar, mozzarella, and Colby Jack until melted.
Season with salt, pepper, paprika, and garlic powder.
Combine
Add the cooked macaroni into the cheese sauce and mix well.
Bake
Pour into a greased baking dish. Top with extra cheddar and mozzarella.
Bake at 375°F (190°C) for 25–30 minutes, or until golden and bubbly.
Broil (Optional)
Broil for 1–2 minutes for an extra crispy cheesy top.
Time Breakdown

Cook Time: 30 minutes
Total Time: 40 minutes
Pro Tip
For deeper flavor, mix ½ cup of evaporated milk into the sauce or add a small handful of smoked cheddar to the cheese blend, it gives the mac and cheese a rich, unforgettable taste.

Ingredients (Makes 5 Servings)
Honey Chipotle Chicken
- 1100g Boneless Chicken Thighs, fat trimmed and cubed
- 2 Tsp Salt
- 3 Tsp Oregano
- 2.5 Tsp Smoked Paprika
- 2.5 Tsp Garlic Powder
- 1.5 Tsp Cumin
- 100g Cholula Chipotle Hot Sauce
- 50g Honey
- 2 Tbsp Minced Garlic
- Lots of Fresh Parsley, finely chopped
- 40g Light Butter (for cooking)
Smokey Chipotle Mac & Cheese
- 260g Uncooked Macaroni
- 20g Light Butter (to toast spices)
- 1.5 Tsp Garlic powder
- 1.5 Tsp Onion Powder
- 1.5 Tsp Smoked Paprika
- 1 Tsp Salt
- 300ml Fat Free Evaporated Milk or Skimmed Milk
- 100g Chipotle Hot Sauce (Brand: Cholula)
- 180g Light Cream Cheese
- 100g Low Fat Cheddar
- Fresh Parsley
👨🍳 Instructions
- Slice chicken thighs into cubes, all seasonings with olive then mix well and let marinate for a few minutes
- Get a pot of water to boil, add uncooked macaroni, boil for 8 minutes then drain water and set aside
- Pan on medium heat, melt butter. Cook marinated chicken for 5 mins each side. Should be golden and crispy
- Lower the heat before adding extra butter, minced garlic, honey, chipotle hot sauce and parsley. Mix well till fully coated then set aside
- Same pan on low heat, add spices, toast for 30 seconds. Then add milk, chipotle hot sauce, cream cheese. Stir till all is melted and smooth then add cheddar cheese
- Stir till creamy and cheesy, add macaroni with parsley then mix till fully combined and silky smooth!
