Food is universal and there are sister cities all over the world, and mine from Melbourne is the wonderful Villers-Bretonneux. With the help of @mailleaustralia beautiful Dijon Mustard, I’ll be creating a steak with creamy lentils dish inspired by Asmae’s beef dish, created all the way in France.

ANBabe requested a dish from Sydney’s sister city, Paris, so I’m riffing on @asmae.kitchen Entrecôte fondante with sauce moutarde @mailleaustralia
Pan-fried rib eye with a Maille mustard sauce, smashed crispy potatoes with pepperberry and parmesan, Butterleaf green salad with mustard vinaigrette and finger lime.

Ingredients
• 1kg baby potatoes
• 60ml (¼ cup/2oz) olive oil
• 40g (½ cup) grated parmesan
• 12 pepperberries
• Sea salt
• 1 tbsp beef tallow (or olive oil)
• 4 x 2.5cm thick sirloin steaks
• 4 sprigs thyme, leaves picked
• 4 shallots, finely diced
• 300ml (10oz) cream
• 65g (¼ cup) Maille Dijon mustard
• 2 finger limes
• 1 tbsp Maille wholegrain mustard
• 1 butter lettuce, leaves separated
Method
Step 1: Potatoes
1. Boil potatoes in salted water for 15 mins until soft. Drain and rinse under cold water.
2. Preheat oven to 180°C fan (355°F), place tray inside to heat.
3. Lightly crush half the pepperberries.
4. Add potatoes to hot tray, crush with a spoon, drizzle with 1 tbsp oil, season with salt and pepperberries.
5. Sprinkle with parmesan and bake 30 mins, flipping halfway, until crisp and golden.
Step 2: Beef
6. Heat tallow in a large frying pan over med-high heat.
7. Season steaks, cook 4 mins per side for medium-rare. Rest.
Step 3: Sauce
8. Crush remaining pepperberries and thyme.
9. Sauté shallots over medium heat until soft.
10. Add pepperberries and thyme, cook 1 min.
11. Add cream, bring to simmer. Stir in Dijon. Simmer on low 5 mins.
Step 4: Salad & Serve
12. Combine remaining oil, wholegrain mustard, finger lime pearls, 1 tbsp water in a jar.
13. Season, shake to combine.
14. Drizzle over lettuce and toss.
15. Serve sliced steak with mustard sauce, crispy potatoes and salad.
