Roasted Maitake Mushrooms with Miso & Furikake OK, I know that this isn't the most Christmas-y dish, but hey, I know that some of you out there want to impress your friends with great vegetable options, so here! It's really simple, just grab your favourite spread and lay perfectly roasted meaty maitakes on top with furikake as a topping. What's not to love?! Fuss free and really quick to make. This is sure to pack a punch at your dinner table Ingredients: 600g maitake mushrooms 2 garlic cloves, crushed 1 small red onion, sliced 3 tbsp olive oil 3 tbsp hot water 1 heaped tbsp miso paste Spring onions Furikake Your favourite spreads or dips Instructions: 1. Leave your maitake mushrooms in big chunks and season with salt 2. Mix the miso paste in hot water and olive oil 3. Marinade the mushrooms with the miso for at least 30 mins 4. In a hot, lightly oiled cast iron pan, cook the mushrooms until nicely browned. 5. Make sure to cook out all the water that comes out of the maitakes 6. Add your crush garlic and sliced onions 7. Roast at 190°C for 10 mins or until tender 8. To serve, spread your favourite dip on the plate and serve the mushrooms over it 9. When done right, it’s deeply savory, luxurious, and often my favorite bite when I go out for Italian food. Any mushrooms work, but I like a mix of oyster, maitake, and beech for a variety of textures and flavors. They’re seared hard in nutty brown butter to complement their earthiness. Then for an umami bomb, I like add miso paste to my heavy cream when making the sauce. Meaty mushrooms, a rich but balanced sauce, and just enough acidity to keep it light. If you’re trying to impress, this is the one.

us when the miso mushroom crispy rice makes its way to the holiday dinner spread: 🕺🎄🕺🎄🕺. ingredients for 4 — * 2–2½ pounds assorted mushrooms, washed and torn into pieces (we used shiitake, maitake, & beech mushrooms) * olive oil * ¼ cup + 2 tbsp white miso * 1 tbsp momofuku rice vinegar * 2 tsp white sugar * 1 tsp + 3 tbsp momofuku soy sauce * 1 scallion, sliced * 1 large yellow onion, sliced * 6 cloves garlic, sliced * 2 cups short grain white rice * 1 cup dry white wine * 3½ cups mushroom (or vegetable) broth directions — 1. heat oven to 425°F. position 2 racks in the middle of oven. 2. line 2 sheet pans with parchment paper & scatter with mushrooms. drizzle 2 tbsp olive oil on each pan, toss, & roast in oven for 25–35 minutes (rotating racks halfway), until the mushrooms are browning & starting to crisp. remove & set aside. 3. meanwhile, whisk together 1 tbsp olive oil, 2 tbsp white miso, 1 tbsp rice vinegar, 2 tsp white sugar & 1 tsp soy sauce. set aside. 4. heat ¼ cup olive oil over medium high heat in a large skillet or braiser. add onions & cook undisturbed for 2 minutes. lower heat to medium low & cook onions for another 8 minutes, until they soften & start to brown. add garlic & cook for 5 minutes. 5. raise heat to medium high, stir in rice & cook for 1 minute. add wine & cook for about 1 minute, scraping up browned bits, until reduced by half. add 3½ cups broth, ¼ cup white miso, and 3 tbsp soy sauce. bring to a boil, cover & reduce heat to low. simmer for 10 minutes. 6. uncover rice, stir gently to re-distribute the liquids, place in the oven & bake on middle rack for 15 minutes. 7. remove the pan from the oven & turn the broiler on high. place an oven rack in the second slot from the top, place the skillet on the rack & broil for 4–6 minutes, watching carefully, until rice is crisped & deeply browned but not burned. 8. just before serving, stir roasted mushrooms, sliced scallions, and miso dressing together & spoon over crispy rice.
