It’s officially spring so it’s lemon season in my book! 🍋 these Lemon Possets are so yummy and so easy to make. You can make them with or without a brûlée top! Recipe inspired by @acozykitchen + @a.goodtable INGREDIENTS: - 8 lemons, halved long ways with pulp scooped out - 16 ounces heavy cream (2 cups) - 2/3 - 3/4 cup granulated sugar (depending on how sweet you want it) - Zest from 1 lemon - 8 tablespoons lemon juice DIRECTIONS: 1. In a small saucepan, bring cream and sugar to boil over a medium-high heat, stirring until sugar dissolves. Reduce heat to medium, and boil 3 minutes, stirring constantly, adjusting heat as needed to prevent mixture from boiling over. Remove from heat. 2. Stir in lemon juice and zest and let sit for 5 minutes to cool. 3. Pour the mixture into the halved lemons. Place them on a cutting board or a cupcake pan and place them in the fridge to chill, at least 3 hours. 4. To brülée them, add a teaspoon of sugar to the top in an even layer. This Whipped Lemon Curd will totally replace butter as it is thick, sweet, smooth, and tangy perfect for tarts, cakes or just simply spread over a warm biscuit. Enjoy! Yield 1 cup Ingredients 2 eggs 1/3 cup sugar Zest from one lemon (used Meyer Lemon) 1/3 cup lemon juice 6 tbsp butter cubed room temperature Instructions In a bowl rub together sugar and lemon zest until the mixture is moist, grainy and yellow. Whisk in the eggs and the lemon juice. Pour the mixture into a saucepan and cook over medium heat stirring consistently until sauce starts to thicken. Remove from the heat and strain the curd. Let it cool for 10 minutes. Add the cubed butter and use a blender or hand blender to whip the curd until it becomes homogenous and smooth. Pour into a jar and refrigerate for a couple of hours. The lemon curd will have a smooth thick consistency. Enjoy! This Meyer Lemon Cake with Labneh by @lmsthompson is light, fluffy texture, and loaded with fresh lemon flavor 🍋 Comment ‘RECIPE’ to have the details sent to your DMs. INGREDIENTS: 6 ounces Meyer lemons (about 2 medium), cut into 1/8ths 1 cup granulated sugar 2 large eggs, 1/3 cup neutral oil, such as grapeseed or avocado oil 2 tablespoons olive oil 1 teaspoon vanilla extract 1 cup labneh, plain Greek yogurt or sour cream 3 cups almond meal 1 tablespoon baking powder 3/4 teaspoon kosher salt Whipped cream (optional), for serving RECIPE: 1. Preheat the oven to 350°F. Coat an 8” round or square baking pan with nonstick cooking spray, and line the bottom and sides with parchment paper. 2. Remove any visible seeds from the lemons. Blend sugar and Meyer lemons in a food processor for 1 minute until smooth. 3. Incorporate the labneh by whisking for about 30 seconds, then add the Meyer lemon mixture until light and fluffy and thoroughly combined. 4. Sift almond flour, baking powder, and kosher salt into the bowl with the wet ingredients. Stir the mixture until no dry spots are remaining. Transfer the combined mixture to the prepared pan. 5. Bake the cake for 40-45 minutes or until the edges turn golden brown and the center fully sets without jiggling. Allow the cake to cool completely, then, if desired, dust it with powdered sugar and top it with whipped cream before slicing and serving. 6. Meyer lemons are perfect for this skin-on recipe that is ready for water bath canning! Ingredients 2 Cups Meyer Lemons Chopped 2 Cups Liquid (Lemon Juice and Water) 2 Cups Sugar Instructions   Thoroughly wash the Meyer lemons and dry. Remove the blossom and stem ends of the lemon then cut in half. ‘Unroll’ the lemon, cutting between each of the triangular sections, removing the seeds and any excess membranes that you see. Then cut these triangle sections into smaller slices.
 As you’re cutting and adding the Meyer lemon slices into a bowl, you’ll notice that some juice leaks out- save that! Measure the excess juice and then add water to the juice to create two cups of liquid.
 Combine lemon slices, lemon juice liquid, and two cups of sugar in a small saucepan.
 Bring to a boil then reduce the heat to medium low and simmer for 20-30 minutes or until the natural pectin in the lemon rinds thickens the marmalade.
 If not canning, transfer to an airtight container and store in the fridge for up to one month.
 If you are canning use the water bath canning method and leave 1/4 inch headspace, process for ten minutes, then let stand for five before removing them from the canner. The canned marmalade will last for 12 months. This is the BEST dessert I have ever baked, I honestly could not fault this recipe. The lusciously silky smooth lemon custard melts in your mouth, and the buttery and crisp brisée pastry brings the perfect amount of crunchy texture. Natalie’s instructions are beyond spot on, I felt like she was there by my side walking me through the entire recipe. This lemon custard tart recipe can be found online on the @ausgoodfood website. Calming Adaptogenic powders by @animamundiherbals 🌼 Recipe Below, lmk if you make these 🌼 Ingredients: 1/3 cup melted butter -85 grams brown sugar -100 grams cane sugar -75 grams 1 eggs at room temperature 1 tablespoon vanilla extract -7 g  1/3 cup flour -125 grams 1 teaspoon happy belly powder- 4g 1/2 teaspoon turmeric- 2g 1/4 teaspoon baking powder- 4g 1/4 teaspoon kosher salt- 2g Zest and juice of 1 Meyer lemon In a large mixing bowl, whisk together the melted butter, salt, brown sugar, and granulated sugar until well combined. Whisk in the eggs and vanilla extract until fully combined. Add the flour, happy belly powder, turmeric and baking powder- mix together first and then stir into the other wet ingredients.  Scoop the batter into the prepared parchment paper lined pan and spread it around into one even layer. Bake at 350 degrees for 18-22 minutes or until the top is set and lightly browned. Remove from the oven and transfer the pan to a wire rack to cool completely. Ganache: 1.5 cups (250g) white chocolate- chopped 1½ tablespoons neutral oil (such as canola, vegetable oil) In a large stainless steel or glass bowl, melt white chocolate and oil over a bain marie (double boiler over lightly boiling water in a saucepan).  Continually stir with a heat proof spatula until melted completely. Pour over blondie and leave for ~10 mins until partially set, then lay edible pressed flowers on top of the soft chocolate. Put in the fridge or freezer until hardened and set.  Cut into 12-14 slices and serve.
