CAI cried the first time I learned about freshly milled flour. 😭 I couldn’t believe store bought flour has been bleached, conditioned, and robbed of all of the 40 out of 44 essential nutrients our bodies need to survive since the 1940’s. Why? By stripping the bran and germ away, you’re left with a shelf stable product. The fiber, healthy fats, and essential nutrients like Vitamin E, B vitamins, and important trace minerals are gone.
What’s worse is I spent most of my life eating what I thought was “whole grain” bread, but it’s actually flour that had the bran and germ removed then added BACK in later. This isn’t whole grain. It’s deceitful dead flour.
I spent 2 years baking sourdough bread for my family only to learn I’d been missing out on all of this by using commercial flour. And that other families also have been missing out on these nutrients!
Freshly milled flour shouldn’t be intimidating because if I can do it with a baby on my hip, I know you can too! And when you ferment it, it becomes a SUPERFOOD! ✨
