Recipe+tips⬇️ I am using vanilla beans for this recipe but feel free to use any spices you like or none at all! I divide my cream in two so that it will cool down as fast as possible but you don’t have to ! When making a whipped ganache, make sure to let it cool down for a few hours. If it’s not cold enough, you will not be able to whip it. Don’t whip it too much if you plan on using it for a mousse cake. The ganache will get denser as it freezes and thaw. - 300 g whipping cream (1) at least 33 % fat to heat - A vanilla pod or a tbsp of vanilla extract - 300 g whipping cream (2) at least 33 % fat kept in the fridge - 240 g white chocolate (at least 30%) - cut in small pieces Heat up the whipping cream (1) to a boil with one vanilla pod or vanilla extract. Let it infuse for 20 minutes. Put your white chocolate in a large bowl. Remove the vanilla pod from your whipping cream (1) and heat it up again to a boil. Pour onto your white chocolate. Let this for 1 min for the chocolate to melt. Add the cold whipping cream and whisk until it becomes homogeneous. Let it rest in the fridge for 6 hours at least otherwise you will not be able to whip it. Whip to soft peaks before assembly of a mousse cake and to stiff peaks for piping

Recipe+tips⬇️ Pistachio crémeux is so versatile ! I love to use it in mousse cake and cream puff but you can also use it for tart or just eat it by the spoon 😉, and the great thing is that if you don’t like pistachio ,you can substitute it with hazelnut butter or even peanut butter. Note that if you are using pistachio cream (like the pisti brand) instead of pure pistachio paste, you should divide the amount of sugar by 2 Ingredients: Gelatin: 2 g (1 sheet) +15 g of water to bloom Whipping cream: 250g egg yolks (room temperature) : 35g (2 yolks) sugar: 30g Pure Pistachio paste/butter (unsweetened) : 70g Start by blooming gelatin in a small bowl with water, leave in the fridge for 15 minutes. In a small bowl, whisk together your egg yolks with sugar. leave that aside In a small saucepan bring whipping cream to a boil. Pour your hot cream on egg yolks. whisk and pour everything back to the saucepan. Cook this custard at low heat while continuously stirring. Stop when the mixture becomes thick, and start to coat your spatula , just like in the video. if you have a thermometer the temperature of the custard is approximately 180°f (82-84C) Add bloomed gelatin to the custard. Pour a bit of your custard to the pistachio paste, whisk until your pistachio paste is fully integrated then add the rest of the custard in while whisking. Pour in a dish and let in the fridge covered with cling wrap directly on the cream. Let it set for at least 3 hours before using it. Enjoy!
