CREAMY ZUCCHINI ORZO ❤️ Follow for more easy recipes! Ingredients 200g orzo (risoni) pasta 3 small zucchini (courgettes) 1 garlic clove, finely chopped 1 tbsp olive oil A handful of fresh basil (optional) Parmesan cheese, to serve (optional) Salt, to taste Method Peel the zucchini, setting the peel aside. Roughly chop the zucchini. Heat the olive oil in a medium saucepan. Add the garlic and fry for 30 seconds until fragrant. Add the chopped zucchini and a pinch of salt. Cook for 3 minutes. Cover the zucchini with water and simmer until very soft (at least 10 minutes) Add the reserved zucchini peel and basil (if using) and cook for 1 more minute. Blend the mixture until smooth to make the sauce. Season to taste. Meanwhile, cook the orzo in a large pot of salted boiling water until al dente, following the packet instructions. Drain. Toss the hot orzo with the zucchini sauce. Serve with lemon and cheese!

Just dump, bake, and enjoy a fresh, veggie-packed dinner in minutes. ​What’s inside: ▪️Zesty lemon & cracked pepper ▪️Chickpeas for protein & fiber ▪️Asparagus & fresh spinach ▪️Orzo pasta INGREDIENTS ▪️1 lb orzo, 453 g ▪️2 cups chopped asparagus, cut into bite-sized pieces — Substitute: green beans or broccoli florets ▪️3 cups vegetable broth, 700 mL ▪️1 cup heavy cream, 236 mL — Substitute: full-fat coconut milk ▪️4 cloves garlic, minced ▪️2 tsp lemon pepper seasoning ▪️½ tsp each salt, mustard powder ▪️¼ tsp ground black pepper ▪️½ cup grated parmesan cheese, 40 g ▪️2 handfuls fresh spinach, roughly chopped ▪️1 15-oz can chickpeas, optional INSTRUCTIONS ▪️Prep: Preheat oven to 375°F (190°C).
