welcome to PACKED LUNCH 🥪 this series is for anyone who wants to bring their own lunch to work but defaults to a sad meal deal because they’ve run out of ideas of what to bring. this will be the format: - every two weeks, I’ll share a batch of 3 different lunches - all made from 1-2 core components - so you get variety without cooking three entirely separate meals basically as minimum prep as possible for maximum flavour. no more eating the same thing every day!!! I’ll post the first two lunches from each batch on here but the third will always be a substack exclusive where I’ll write up all three recipes + the smartest way to prep them all in one go so you can save yourself time during the week. I’m also aiming to have all three recipes written up on Substack when the first lunch goes live, so if you want the full batch and the prep plan straight away, that’s where to go. first recipe in this batch drops on WEDNESDAY: harissa chicken & grain salad stay tuned pals x

HEALTHY UPF FREE PACKED LUNCH IDEAS 👉🏼 HONEY LEMON CHICKEN PROTEIN PREP BOXES This is the kind of lunch I like to prep as a nutritionist. High protein, fibre rich and designed to hold their texture and flavour for busy weeks. Filling and balanced, the perfect lunch. Containers are @blackblumdesign use my AFF code EM10 for 10% off site! Makes 3 boxes at approx. 520 kcal & 40g protein 330–360g mini chicken breast fillets or chicken breast cut into strips
Juice of 1 lemon
1 heaped tsp honey
1 tsp smoked paprika
1 tsp garlic granules
1 tsp dried oregano
1 tsp olive oil For the butterbean salad
1 tin butterbeans, drained
200g cherry tomatoes
½ large cucumber, deseeded and chopped
½ small red onion, very thinly sliced
100g pack fresh parsley, finely chopped (avoiding stems)
3 tbsp Kalamata olives, sliced in half 
1–2 tsp red wine vinegar to taste
 For the feta yoghurt dip
100g feta
150g Greek yoghurt
1 tsp honey
Salt
Optional pinch of chilli flakes Mix the lemon juice, honey, smoked paprika, garlic granules, oregano, black pepper, salt and olive oil. Add the chicken and coat well. Marinate for 15–20 minutes. Air fry at 200c or pan-fry over a medium heat, turning as needed, until golden on both sides and cooked through but still tender. Set to one side. Add the red onion to a bowl with lemon juice. Toss and leave for a few minutes to take off the raw edge. Add the butterbeans, tomatoes, cucumber, parsley and olives. Dress lightly with the red wine vinegar and a little olive oil, avoid salting to stop too much water from leaking out. Season when eating! Blend or mash the feta, Greek yoghurt, honey, salt and chilli (if using) until smooth. Chill for 20 minutes to thicken to a hummus-like consistency. Divide the salad between three containers, top with chicken, add a generous dollop of the feta yoghurt dip and finish with a wedge of lemon. Store sealed in the fridge for up to 3 days. Add the lemon just before eating for freshness

I remember posting about my classroom pantry a few years ago and receiving so many comments from educators telling me not to give food to the kids who behave negatively because it “enables” their bad behavior. But food should never be an incentive or a reward at least to me. I was someone who never went to school with a packed lunch because my parents relied on school lunches. Food is a basic human need. If a child is hungry, they are not thinking about phonics, math, or behavior charts, they’re thinking about their stomach. I understand where some teachers are coming from. Many educators are already spending their own money and simply can’t afford to provide food for every student. That reality is frustrating and unfair. But when we tie food to behavior, the message students receive is that their basic needs must be earned. And that’s a heavy message for a child. A classroom pantry isn’t about rewarding behavior, it’s about removing barriers to learning and reminding students that they are cared for, no matter what kind of day they’re having. Because hungry kids can’t learn, but kids who feel cared for can.
