This popular Polish cream cake usually consists of two layers of pâte à choux coupled with a thick layer of creamy, vanilla-flavored pastry cream. Occasionally, the bottom crust is replaced with shortcrust pastry, while the top is always made with pâte à choux.
When sprinkled with powdered sugar, the uneven top of the cake resembles the snow-capped Carpathian mountains, hence the name. Though not much is known about its origin, the earliest mention of karpatka dates back to 1972. Considered to be a close relative of the more popular kremówka, the cake is a staple in Polish pastry shops, but it is also a common home-cooked dessert.

GI🇵🇱 Polish Blueberry Danish (Drożdżówki z Jagodami) 🫐✨
Ingredients
Dough
• 1 cup + 2 Tbsp warm milk (265 ml, ~110°F)
• ⅓ cup sugar (75 g)
• 1 tsp salt
• 2 ¼ tsp instant yeast
• 1 large egg
• 3 ½ cups all-purpose or bread flour (450 g)
• 3 Tbsp unsalted butter, very soft (45 g)
• Optional: 1 tsp vanilla + ½ tsp lemon zest
Blueberry Filling
• 2 cups blueberries (fresh or frozen)
• ¼ cup + 2 Tbsp sugar
• 2 tsp cornstarch or potato starch
• 2 tsp lemon juice
• 1 tsp lemon zest
• 1 tsp vanilla extract
Crumble (Kruszonka)
• 5-6 Tbsp flour
• 3 Tbsp sugar
• 3 Tbsp cold butter, cubed
Icing Drizzle
• ½ cup powdered sugar
• 1–2 Tbsp milk
• 1 tsp lemon juice
Instructions
Make the Dough
1. Combine warm milk, sugar, salt, and yeast. Whisk in egg, then add flour. Mix into a dough.
2. Knead 5–7 minutes until smooth and elastic.
3. Knead in soft butter until glossy.
4. Cover and rise until doubled (1–1 ½ hrs).
💡 The dough will be tacky but don’t add extra flour or the buns will be tough. Lightly oil or flour your hands instead.
Make the Filling
1. In a saucepan, cook blueberries, sugar, starch, lemon juice, zest, and vanilla over medium heat.
2. Stir until thick and jammy (4–5 mins). Cool completely.
Make the Crumble
1. Rub flour, sugar, and butter together with fingertips until coarse crumbs form.
2. Chill until ready to use (this keeps the crumble chunky- I forgot to do this with mine 🙈)
Shape the Buns
1. Punch down dough, divide into 12 (65–70 g each).
2. Roll into balls, place on parchment-lined tray.
3. Flatten slightly, press a deep well in the centre.
4. Cover and rise 30 mins.
5. Fill & Top
6. Spoon cooled blueberry filling into each well.
7. Top generously with chilled crumble.
8. Brush exposed dough with egg wash.
Bake
1. Bake at 350°F (175°C) for 18–22 mins, until golden and bubbling.
2. Cool on a wire rack.
Finish
1. Whisk powdered sugar, milk, and lemon juice.
2. Drizzle over pastries once just warm.

SNBro!!! I had a Packzi Pulled Pork Sandwich today and it blew my mind. 🤯🤯🤯 Saddleback BBQ does this once a year apparently, a glazed Packzi with pulled pork and Blueberry Bbq sauce and hot honey drizzle. We went overboard by ordering four but well worth it lol. 😋
