“Untreated pinecones are extremely unpleasant to eat. The polyphenols, resins, and tannins they contain make them astringent and difficult to enjoy. To prepare them, we rely on two primary leaching methods.
The first uses water: the pinecones are brought to a boil in large volumes of water, which is changed ten consecutive times. Each change of water lowers the concentration of tannins and other bitter water-soluble compounds. The downside of this method is the considerable time it requires, along with the loss of the pinecones’ naturally firm texture.
In the second method, the pinecones are leached in a strong alkaline solution such as sodium hydroxide, which is far more effective at dissolving terpenes and acidic polyphenols like tannins. This approach preserves the pinecones’ texture much more effectively while providing a flavor profile reminiscent of Greek Kalamata olives.
Because of the corrosive nature of lye, the pinecones must be thoroughly purged with repeated changes of water following leaching, before being preserved first in brine and then in oil.
We use the brined pinecones in much the same way as brined olives, as a bright, refreshing element.
Candied pinecones offer a unique blend of sweet forest notes and texture. The accompanying syrup is also excellent in beverages and vinaigrettes.
The lye-cured pinecones are by far the most distinctive of the three preparations. This preservation method gives them greater body and a deeper savory character—something we internally refer to as a ‘pinecone olive.’”

Ingredients:
2 cups soy wax or beeswax flakes
20 drops cinnamon bark essential oil or essential oil of choice
10 Pinecones (dry)
Instructions:
1. Wrap pine cones tightly with cotton or hemp candle wick leaving room on top of pine cone.
2. Melt soy wax flakes slowly in double boiler.
3. Allow to cool for one minute.
4. Add cinnamon essential oil and stir.
5. Drizzle or dip pinecones in wax mixture and set on wax paper to dry.
6. Continue dipping to build up layer of wax. You may need to repeat 4-5 times to get consistency you like.
7. After dry, light them in fireplace to get it started.
This would make a quick and easy homemade gift this season as well! 🌲
