ALPretzel Rolls
Ingredients
Dough:
• 450 g all-purpose flour
• 7 g instant dry yeast (1 packet)
• 1 teaspoon sugar
• 1½ teaspoons salt
• 250 ml warm milk
• 40 g melted butter
Baking soda bath:
• 1 liter water
• 3 tablespoons baking soda
Topping:
• Coarse salt

Instructions
1️⃣ Make the dough
1. In warm milk, dissolve the yeast and sugar. Let it sit for 5–10 minutes until foamy.
2. Add flour, salt, and melted butter.
3. Knead for 8–10 minutes until smooth and elastic.
4. Cover and let rise for 60–90 minutes, until doubled in size.

2️⃣ Shape the rolls
• Divide the dough into 8 equal pieces (about 90 g each).
• Shape into smooth balls.
• Let them rest for 15 minutes.

3️⃣ Baking soda bath
1. Bring 1 liter of water to a boil.
2. Add 3 tablespoons baking soda.
3. Boil each roll for 20–30 seconds per side.
4. Remove with a slotted spoon and place on baking paper.
Don’t boil longer or they may taste bitter.

4️⃣ Score & top
• Score each roll with a sharp knife (cross or single slash).
• Sprinkle with coarse salt.

5️⃣ Bake
• Oven temperature: 220°C (430°F)
• Bake for 15–18 minutes
• Until deep golden brown.
