Paired with rice and a zesty Dijon dressing, it’s a sweet, savory, and beautifully balanced dish. Quick and simple to make, yet feels anything but ordinary! Time to make: 20 minutes ⁠ ⁠ Serves: 2⁠ Ingredients:⁠ 2 large handfuls argula/rocket ⁠ 250g (8.8 oz) packet mixed rice ⁠ 10 cherry tomatoes, halved⁠ 1 cucumber, diced ⁠ ¼ cup green olives, pitted ⁠ 2 tbsp hummus ⁠ ½ cup pomegranate arils ⁠ 200g (7 oz) halloumi, sliced into strips ⁠ 1 tbsp honey⁠ 3 sprigs thyme⁠, leaves picked⁠ Dressing:⁠ 1 tbsp extra virgin olive oil⁠ ½ lemon, juiced ⁠ 2 tsp maple syrup (or honey⁠) 1 tbsp Dijon mustard⁠ ⁠ Method:⁠ To make the dressing, combine all of the ingredients in a small bowl and whisk until smooth. Season to taste with sea salt and black pepper. ⁠ ⁠ Divide the arugula/rocket, rice, tomatoes, cucumber, olives, hummus, and pomegranate across two serving bowls. ⁠ ⁠ Pat the halloumi dry with a paper towel. Heat a non-stick frying pan over a medium high heat and lightly grease with extra virgin olive oil. Cook the halloumi for 1–2 minutes on each side or until golden. Drizzle the honey over the top of the halloumi along with the picked thyme leaves. Cook for a further 1 minute.⁠ ⁠ Place the honey halloumi on top of the nourish bowl and serve.
