It was originally created as a method of preserving meat, but I haven’t left it out on the side to test whether it works or not, as it’s too bloody delicious not to gobble up right away. BEEF RENDANG A lovely Indonesian inspired curry. Don’t be put off by the long list of ingredients, it is surprisingly quick to make up and sits happily in a low oven until you need it. This makes enough for 4-6 people and freezes well if you have leftovers. INGREDIENTS For the paste: 1 brown onion, very roughly chopped 3 garlic cloves 1 or 2 red chillies as per your heat preference Thumb sized piece of ginger Zest of 1 lime For the curry: 5 cardamom pods, bashed to release the seeds 1 star anise 2 tsp ground coriander 2 tsp cumin seeds 1 stick lemongrass, bashed to release flavour 1 kg beef braising steak 300 ml beef stock 1 tbsp fish sauce 2 tbsp soy sauce 1 tbsp tamarind 1/2 block creamed coconut 1 round (about 65g) palm sugar 5 kafir lime leaves Juice of 1 lime Coriander to garnish METHOD Blend all the ingredients for the paste together. Heat some coconut oil in a deep casserole dish. Add the paste and fry off for a minute or two, add the spices and continue to fry for another minute. Add the beef to the pan and brown off. Add the stock, fish sauce, soy sauce, tamarind, coconut, palm sugar, lime juice and leaves and bring to a simmer. Taste and adjust as necessary. Place in a low oven (100c) or a slow cooker for at least 4 hours (I did mine for 8, it will tick away until needed). Serve with fluffy jasmine rice and garnish with freshly chopped coriander. #Recipe #curry #cooking

KING OF CURRY Beef rendang Ingredients: For the paste • 7 shallots • 6 garlic cloves • Small piece ginger • Small piece galangal • 6 Thai red chillies • Stem of 2 lemongrass For toasting • ¼ cup shredded coconut • 3 star anise • 1 long cinnamon stick • 2 bay leaves Spices & main • 2 tbsp coconut oil • ½ tsp turmeric powder • ¾ tsp coriander powder • 1 tsp cumin powder • 1 tbsp Kashmiri chilli powder • 1 tsp salt • 750 g beef (fatty cut like brisket recommended) • 1 can coconut milk • Remaining lemongrass • 1 tbsp palm sugar or brown sugar Can add salt after reducing the gravy ⸻ Method 1. Blend all paste ingredients into a smooth paste. 2. On medium heat, dry-toast shredded coconut, star anise, cinnamon, and bay leaves until aromatic. 3. Add the blended paste and cook for 2–3 minutes. 4. Blend everything again with a little water to form a rich paste. 5. Heat coconut oil in a heavy pan and add the paste. 6. Add turmeric, coriander, cumin, Kashmiri chilli powder, and salt. Mix well. 7. Add beef and coat evenly. 8. Pour in coconut milk, add remaining lemongrass, cover and cook on low heat for 1–2 hours. 9. Open the lid, add palm/brown sugar, and reduce until semi-dry and glossy. Serve with Jasmine rice, basmati rice, porotta, appam, or puttu Enjoy 🫰

My friend got me these last summer and I just had to try it, I used 2 packets for 1 kg beef (used pre-cut Goulash beef from the supermarket. It was honestly not bad!
